Lemonema belongs to the cod family; its meat is very tasty, tender and juicy; there is no fishy smell as such. In addition, this fish has few calories and is therefore indispensable for dietary nutrition. Another advantage of lemonema is that there are few bones. But, despite the taste characteristics, lemonema is in low demand, because not everyone can prepare it correctly. Very tender meat quickly boils, spreads and, as it were, “spreads” into porridge. I am also not a special expert in Lemonema, but due to circumstances it is necessary to master its features. It is best to fry or bake this fish and preferably in batter, dough or breadcrumbs, this way less juice is lost, which contains the microelements we need. Soups are not usually made from it. My mother can’t eat fried fish, but she loves this fish very much, so I had to come up with something that would be both tasty and healthy. I cook often and this time I also use it. There are a minimum of ingredients, since I didn’t want to overwhelm the taste of the fish. I cook whole fish. I think it tastes better this way.

Ingredients:

  • Lemonema fish - 350-400 grams.
  • breadcrumbs - 4 tbsp. spoons.
  • seasoning for fish - 2 teaspoons
  • onion - 1 piece.
  • vegetable oil - 2 tbsp. spoons.
  • salt, pepper - to taste.

How to prepare lemonema:

1. The first thing to do is defrost the fish, leave it in the refrigerator for several hours and only then at room temperature. A lot of liquid will be released, salt it and dry the fish with a napkin. Don’t forget to clean off the scales, sometimes you get them on the fish, but they’re not very visible. Just scrape the fish with a knife. Let's prepare the remaining products. My seasoning is “Lemon for fish”.

2. Sprinkle the lemonema with seasoning on all sides. You can add a little salt and pepper to the fish. Leave for 15 minutes.

3. Peel the onion and cut into rings, at least 0.5 mm thick. The onion is here not only for taste, but also for the fish to rest on. When baking, the juice from the fish will still flow out, and so that the fish does not swim in it, we need onions. You can use carrots. Place onion rings in the bottom of a microwave-safe pan.

4. Carefully roll the lemonema in breadcrumbs, on all sides, very carefully. Place it on the onion rings in the pan. Let's pour it with vegetable oil.

5. Place the pan in the microwave, close the lid and turn on the timer for 5 minutes at a power of 800 W.

6. This is how the fish turns out. As you can see, the juice came out anyway. There are two options: you can leave it, or you can drain it. In the first case, the fish will be more boiled, in the second - baked, that is, a little drier. I'm draining the liquid. Be careful, it's hot!

7. Put the pan with lemonade in the microwave again, but now for 3 minutes. The fish is ready! Let's let it cool a little. Use a spatula to separate a piece of fish pulp and serve with your favorite side dish. It goes very well with rice or vegetables. The fish turned out very tasty, soft and aromatic.

Cooking the recipe “Oven-Baked Lemonema”

  1. Wash the fish, clean it, fillet it, cut it into portions, sprinkle with lemon juice, lightly salt, sprinkle with fish seasoning.
  2. Peel, wash, cut the vegetables: onion into half rings, sweet pepper into strips, grate celery and carrots on a Korean grater.
  3. Heat the vegetable oil and butter, fry the prepared vegetables until soft.
  4. Then add canned tomatoes, tomato paste, pour in a little water, salt, add a pinch of sugar, simmer for 5-10 minutes.
  5. Place pieces of fish in the form and arrange the vegetables evenly on top. Peel the hot pepper from seeds and membranes, chop, add to the vegetables.
  6. Place the pan in the preheated oven and bake for 20 minutes.
  7. Serve fish with vegetables, garnished with herbs.

  • Onion – 150 g
  • Carrots – 200 g

Cooking baked lemonema with vegetables in the oven

Chop the onions and carrots the way you like. Rinse the beans under running water. Mix the vegetables, add sour cream, spices, and just a little salt.

Place the resulting vegetable mixture for lemonema in a baking dish. I cook in my favorite casserole dish.

If you are preparing lemonema, it is better to remove the fins from the back. We make a cut on both sides and remove them.

Salt the lemonema on both sides, coat it with sour cream and place it to “rest” on the vegetables. Bake in a well-heated oven (about 180-200 degrees) for 20 minutes. You need to monitor the process so as not to overcook it, but also not to leave the fish raw.

How to cook lemonema in the oven?


Compound:

  1. Lemonema - 1 kg
  2. Carrots - 3 pcs.
  3. Onions - 3 pcs.
  4. Lemon juice - 2 tbsp. l.
  5. Tomato paste or ketchup - 100 g
  6. Breadcrumbs - 100 g
  7. Salt, pepper and herbs - to taste
  8. Cheese - 250 g
  9. Vegetable oil

Preparation:

  • Before you start cooking, you will have to thoroughly gut the fish, rinse it under running water and dry it. Remove the fins, tail and head.
  • Cut the prepared lemonema into 2 parts crosswise. Roll each half in breadcrumbs, salt and fry in a frying pan.
  • Place the fried fish in a baking dish or any other fireproof dish. Don't forget to grease the dishes with vegetable oil so that the fish does not burn and can be easily separated after cooking.
  • Peel the vegetables. Cut the carrots into thin slices or grate them - whatever you like. Cut the onion into small cubes. Fry the onions and carrots until half cooked, then add lemon juice, tomato paste, herbs and salt.
  • Simmer the dressing for about 7 minutes with the lid closed. At this time, grate the cheese on a coarse grater.
  • Pour the prepared marinade over the lemonema. Sprinkle the prepared dish without sparing the cheese, then place it in the oven preheated to 200 degrees. Lemonela will be ready in 15 minutes. Serve the dish hot with a side dish of potatoes, rice or pasta.

Preparation:

  • To cook lemonema with potatoes in the oven according to this recipe, it is better to take fish fillet. If this is not possible, gut the carcass, remove scales, remove unnecessary parts (tail, head, gills, fins) and rinse well.
  • Cut the fish into portions, roll in flour and fry in vegetable oil.
  • Peel the potatoes and onions. Cut the potatoes into thin slices, the onion into half rings. Fry the onion rings until golden brown. Boil the eggs hard.
  • Place foil or baking paper on the bottom of the baking dish. Add potatoes, salt and pepper. The next layer is fried lemonema pieces. Season again. Place eggs cut into slices on the fish and fried onions on them. Season with salt and pepper.

  • Lemonema prepared this way doesn’t even require a side dish. The only thing is that you can prepare a light vegetable salad and serve it along with the dish to the table.

Compound:

  1. Lemonema - 0.5 kg
  2. Lemon - 1 pc.
  3. Onions - 3 pcs.
  4. Carrots - 2 pcs.
  5. Garlic - 5 cloves
  6. Butter - 100 g
  7. Soy sauce - 50 ml
  8. White wine - 150 ml
  9. Salt, pepper, coriander - to taste

Preparation:

  • If you have frozen fish, wait until it thaws naturally, otherwise, after cooking it will be loose and watery. Clean each fish thoroughly, gut it and rinse thoroughly under running water. Place the prepared carcasses on paper napkins to dry.
  • Cut the lemon into slices and peel the vegetables. Cut the onion into rings, carrots into slices, pass the garlic through a press or cut into slices. Rub the fish carcasses with spices and salt, stuff with lemon slices and pieces of butter.
  • Cover the bottom of the baking sheet with parchment and grease with oil. Place onion rings in the first layer, then carrot slices, garlic cloves. Spread the remaining butter and add the stuffed lemonema carcasses. Pour soy sauce and wine over the dish.
  • Cover the baking sheet with foil and place in the oven. Bake at 220 degrees for approximately 40 - 50 minutes. Brown rice or green beans are ideal as a side dish for this dish.

Then, remove the fins with a knife, making an incision on both sides of the fin. We remove all the insides from the belly of the fish, including the dark-colored film. Afterwards, we take out the fillet, separating it from the ridge of the fish.


Lemonema fish belongs to the Pestilidae family. It has a light brown color, 2 dorsal fins and its entire body is covered with small scales. Some species of whales readily feed on such fish. The average weight of such fish is 350 grams, and its length reaches up to 70 cm.

As a rule, this type of fish is rarely found on store shelves, since it is considered not very popular in Russia. But if it does occur, it is already cut up and processed (without head, fins and tail). But Lemonema differs from other types of fish due to its low price and beneficial properties. Its meat tastes very tender and has almost no bones. Lemonema carcass can be subjected to various heat treatment methods: frying, stewing, boiling and baking.

The most delicious fish is fried fish! To prepare this fish we will need:

1. Lemonema carcass

8. Garlic - 1 clove

9. Pepper, salt - to taste

10. Dill and parsley - to taste

11. Vegetable oil - for frying

Before cooking, wash all vegetables with water and prepare the fish for frying. Divide the lemonema into portions, pepper and add salt. Give it time to absorb. Pour flour onto a plate and coat each piece of fish in it.

Place a frying pan on the fire, add vegetable oil and fry the lemonmea pieces until an appetizing crust forms.

Now let's prepare the sauce. Boil a hard-boiled egg in a small saucepan, then chop it finely. Transfer to a salad bowl. Then, we also chop the pickled cucumber, bell pepper, dill and parsley. Squeeze the garlic there and add mayonnaise. Don't forget to pepper. The fish is ready, so is the sauce. Let's prepare the side dish.

Peel the potatoes, wash them and boil until fully cooked.
