  1. Delicious apricot pies have an easy-to-prepare dough. It is prepared as follows: break the eggs into a working container (they should be at room temperature). To do this, remove them from the refrigerator a couple of hours before cooking.
  2. Then add sugar and beat with a mixer for about 2 minutes until a light foam forms.
  3. Pour sour cream into a container with egg mixture. You can add Mascarpone cream cheese instead. Beat with a mixer for 30 seconds.
  4. Sift the flour into a separate container, add soda and salt. After this, add baking powder. Mix everything well with a spoon.
  5. Take the flour and gradually add it to the egg-sour cream mixture, stir until all the lumps dissolve.
  6. Once you have a uniform consistency without lumps, add the orange zest. To do this, take a grater and lightly rub the edges of the orange peel. It is more convenient to zest a whole fruit. After adding it, mix the apricot pie dough thoroughly.
  7. Take a baking pan. For this I choose a container measuring 20 by 30 centimeters. Line it with baking paper and pour in the dough. Level the surface with a spoon or spatula.
  8. Afterwards we take the apricots and wash them. Break it in half, discard the pit, and place the halves, center up, on the surface of the pie.
  9. Next, sprinkle the apricots with sugar.
  10. Preheat the oven to 190 degrees. According to the recipe, the apricot pie should be baked for 40 minutes: however, keep in mind that the baking time depends on the kitchen utensils and equipment features - so check the oven periodically.
  11. When ready, take out the pie and leave it to stand for 10 minutes at room temperature so that it does not suddenly settle.
  12. After that, take it out of the mold, cut it into uniform pieces and serve.

Additional ingredients will be: 3 cups of flour, 150 grams of butter, 2 eggs and 1 cup of milk. The aromatic additives will be: 10 grams of vanilla sugar (more is possible), a small spoon of powdered sugar, 3 teaspoons of baking powder and a gram of salt.

How to bake?

Today I offer a recipe for delicious and aromatic homemade baking - we are preparing a pie with apricots on yeast dough. An appetizing golden brown crust, an airy crumb and a lot of juicy, fragrant filling await you. Apricot pie is perfect for a cozy tea party with your family or for welcoming long-awaited guests.

I suggest making the dough for this pie using my favorite one - with sour cream, chicken eggs and vegetable oil. It can be kneaded by hand (as in this recipe) or in a bread machine or food processor with a hook attachment. In addition to apricots, plums, peaches or nectarines are great for filling, but it is with apricots that these pastries are the most delicious for me.

The recipe for yeast dough for a pie includes the following ingredients: premium wheat flour, medium-fat sour cream (I use 20%), medium-sized chicken eggs (45-50 grams each), refined vegetable oil (I use sunflower) oil, salt, sugar and fast acting yeast. All ingredients for the dough must be at room temperature. For the filling we will need fresh apricots (the weight of the fruit is indicated with the pit), granulated sugar and semolina. In addition, we use egg yolk and milk to grease the baked goods (can be replaced with 1 chicken egg).


First of all, sift the wheat flour (preferably twice) into a container suitable for kneading and fermenting yeast dough. Thanks to this technique, the flour will not only be saturated with oxygen, but also possible debris will be removed. I immediately use exactly 500 grams of flour, since I always use a product from the same manufacturer (Lida flour), but you may need more or less. You can, of course, immediately knead the dough on the table, but it is much more convenient in a bowl (for example, the same liquid ingredients will not run away).





At the beginning of kneading the yeast dough, you can simply mix all the ingredients with a fork, spoon or hand so that the flour is moistened, absorbing the wet ingredients. If you have a bread machine or dough kneader, the kneading process is greatly simplified and your work is reduced to a minimum. You need to knead the dough for quite a long time (at least 10, and preferably 15 minutes) and intensively - it is advisable to do this with your hands on the table. An electric assistant will do the job in about 7 minutes. As a result, this rich yeast dough should become completely homogeneous, smooth, very soft and tender, slightly sticky. Round the dough and place it in a bowl greased with a small amount of vegetable oil (not listed in the ingredients) so that it does not stick to the dishes during the fermentation process. Place the dough in a warm place for 1 hour. Where is the best place for the dough to ferment and what does a warm place mean? There are several options. First of all, in the oven with the light on (it turns out to be approximately 28-30 degrees - the ideal temperature for fermenting yeast dough). Then cover the bowl with the dough with cling film or cover it with a towel made of natural fabric (linen is best) so that the surface does not become airy and crusty. You can also let the dough ferment in the microwave, in which you first bring a glass of water to a boil. The dough will rise when the door is closed, and the glass will stand there. Then there is no need to cover the bowl with anything, since the water will evaporate, thereby maintaining the necessary humidity. Just make sure that no one inadvertently turns on the microwave, otherwise the dough will disappear and the apricot pie will not work out.


After about an hour from the start of fermentation (time is a relative concept, more or less may be needed), the yeast dough will grow perfectly, increasing in volume by 2-2.5 times. If the dough rises poorly, it means you have old yeast - increase the fermentation time.




While the dough was rising, we prepared the apricots. They had to be washed, dried, seeds removed, and the pulp cut into arbitrary pieces.


Lightly sprinkle the working surface with wheat flour (for rolling out and molding, the amount of flour in the ingredients is not indicated, but 2-3 tablespoons is enough). Knead the dough, releasing carbon dioxide from it.


After this, divide the yeast dough into 2 parts (approximately the same size). One piece will become the bottom of the future pie, and the second will be needed for the top and decoration. Round the dough, cover it with a towel or cling film and let rest for 5-7 minutes. If you don't let the dough rest for a while, it will roll out poorly and shrink back.


Roll out one piece of dough into a layer, dusting it with flour if necessary, to the size of the baking pan. I have a rectangular shape (32x22 centimeters), but a round or any other will work perfectly. You can even bake a yeast pie with apricots directly on a baking sheet.


I advise you to cover the baking pan with parchment paper or grease it with vegetable oil. We place the dough in it so that we get sides.
