1 option
You can simply cool the spread marshmallow foam at room temperature without putting it in the refrigerator or oven. In this case, the marshmallow dries and sets on top, but remains very light and foamy inside. This takes 4 - 5 hours. If you leave it overnight, then perhaps the marshmallow inside will become denser. Unfortunately, in my family he did not live to see the morning :)

Option 2
Cool the spread marshmallow foam in the refrigerator (not in the freezer) for 3 - 8 hours. The marshmallow turns out dense, as it should be, but with a very delicate and soft shell. It’s tasty, but a little sticky to your hands :) At the moment, this is the most successful way to prepare marshmallows with a sweetener.

Option 3
Dry the spread marshmallow foam in the oven at t = 60 - 100°C.
The technology is a little similar to making meringue (meringue), but now our goal is not to dry the marshmallow to the point of brittleness, but to dry it so that the mass becomes denser and is easy to handle with your hands, but at the same time remains moist. Therefore, we do not move far from the oven and constantly check the readiness of the marshmallows by touch.

Option 4
The simplest and most reliable method that all housewives use.
Simply spread the marshmallow foam into bowls and refrigerate for 8 to 12 hours. You can eat such marshmallows with a spoon directly from the bowl, or try to transfer them to a serving plate, but 90% of the time it will not be possible to preserve the shape of the marshmallows, and the appearance will be ruined. It’s better to decorate the marshmallows in a bowl with berries before serving :) By the way, if you make low-calorie tartlets, you can fill them with marshmallow mixture and put them in the refrigerator to harden.

If a person loses weight and switches to proper nutrition, then he has to give up various sweets, which, as we know, contain a lot of calories. But they shouldn't despair. There are alternatives to sweets. To be more precise, there are modified recipes for sweet dishes that contain much fewer calories than regular high-calorie ones.

A good example of such a dish would be dietary marshmallows. In terms of taste, it will not differ from its “original”, which is sold in supermarkets. But at the same time, a person will spend much less money.

Making marshmallows is quite easy and interesting. So after the first preparation, a person will definitely want to cook something else. It is also important that such marshmallows will be natural, that is, it will not contain various additives, such as flavors, dyes, preservatives and stabilizers, the safety of which has not been officially confirmed. Diet marshmallows have another advantage, such as a variety of recipes. Here you can add a variety of fillings and flavors that both adults and children may like. You can make marshmallows with fruits, berries, or just sugar and vanilla. Let's look at several options for making dietary marshmallows at home.

Classic diet marshmallows

The basis of marshmallows is gelatin and sugar. To prepare regular marshmallows, you need to take 25 grams of gelatin, 1 teaspoon of citric acid, 300 grams of sugar, 1 teaspoon of soda and vanillin. You need to pour half a glass of preheated water, pour in the gelatin and leave it alone for a while.

Then you also need to mix half a glass of water with sugar and cook on the fire for 8-10 minutes. After this time, the swollen gelatin must be folded into the resulting syrup. This mixture must be stirred with a mixer for seven minutes. After adding citric acid, you need to stir again with a mixer, but for five minutes.

Next, if you want to feel the vanilla taste, you should add more vanillin. Add soda to the mixture. And again you need to turn on the mixer, but for four minutes. So, what came out in the end was a fairly thick white mass. The molds must be greased with oil so that the marshmallows, when ready, can be safely removed without damaging their appearance. After oiling, you need to lay down parchment paper. But if you have silicone molds, you won’t need it.

After this procedure, you can already pour the mixture into molds and put it in the refrigerator for a day or so. After this time has passed, you can take out the molds. You need to remove the marshmallows with a knife. Next, the finished dietary marshmallows must be completely rolled in powdered sugar and you can start eating.

Diet marshmallows with apples

Perhaps it’s worth considering another way to make dietary homemade marshmallows. It will be much different from the one described above.

To prepare, you need to take a large apple, weighing about 200 grams, and divide it into four parts. The core, of course, needs to be cut out. The apple needs to be baked in the oven for half an hour, and the temperature should be 180 degrees. At this time, you need to take two egg whites and beat them together with 10-20 grams of honey using, again, a mixer.

You can now remove the baked apple from the oven and mash it with a fork. Add 5 grams of gelatin to the water and heat in the microwave. After all the steps, you need to mix all the masses together, pour into molds and place directly in the refrigerator. You need to wait about two hours for it to be ready.

An alternative would be another recipe for dietary marshmallows at home. According to it, you need to take one and a half teaspoons of agar and dissolve it in cold water in the amount of 100 milliliters. Again, you need to take apples, but two of them, cut them into several parts, remove the core and bake again, but only for five minutes. Next, you need to puree them using a blender.

Heat the agar for a minute, stirring it constantly. With the addition of applesauce, it is necessary to boil and remove from heat. Next, you need to take two whites, beat them well and, without stopping beating, gradually add a mixture of agar and apple. When everything is united, you can already put it in molds and leave to cool at room temperature.

What is marshmallow

Marshmallow is a confectionery product belonging to the sugary family. This genus of marshmallow has ancient origins. Historians claim that it appeared in the Middle East, Western Asia, and Southern Europe. When preparing, we used egg white and granulated sugar as the main components. The ancient oriental sweet is different from today's. A modern variety of marshmallow with balanced BJU indicators was invented by Ambrosy Pavlovich Prokhorov.

Cooking method

  • Soak the agar in the specified amount of water 30 minutes before preparing the marshmallows.
  • Pour (loudly said) water over the sugar, put it on the fire, let the sugar disperse and cook the syrup for 5-7 minutes. Do not stir with a spoon, you can only rock the ladle from side to side, otherwise it will crystallize and come into clumps. At the end, add lemon and stir. Pour in the soaked agar-agar and cook together for another 3 minutes.
  • While the syrup is boiling, you need to beat the jam with the egg white until the mass turns white and increases in volume by 3-4 times.
  • Pour sugar-agar syrup into the whipped mass in a thin stream, without stopping whipping, and beat for another 1 minute.
  • Transfer the marshmallow mixture into a pastry bag with a nozzle and pipe onto parchment paper. I got 1 large baking sheet, maybe more, I’m just still adapting to the new assistant, and I tightened the whisk after cooking. In general, this can be done with a regular mixer.
  • Well, that’s all, all that remains is to sit for at least 12 hours in a dry place (in my oven), during which time the marshmallows should be covered with a thin crust. Roll in powdered sugar and serve with tea and coffee.
  • Enjoy your tea!

Making your own marshmallows for type 2 diabetes is quite possible. You can eat it without fear, but still in moderation, because the delicacy will still contain a certain number of calories and carbohydrates. The recipe is:
  • Prepare Antonovka apples or another variety that are quickly baked (6 pcs.).
  • Additional products - sugar substitute (equivalent to 200 g of sugar), 7 proteins, a pinch of citric acid, 3 tablespoons of gelatin.
  • Soak gelatin in cold water for 2 hours.
  • Bake the apples in the oven, peel and puree them in a blender.
  • Combine the puree with sweetener, citric acid, and cook until thickened.
  • Beat the egg whites and combine with the cooled puree.
  • Mix the mixture using a pastry bag and place spoons on a parchment-lined tray.
  • Place in the refrigerator for an hour or two, if necessary, dry at room temperature.

This product can be stored for 3-8 days. For diabetes mellitus, such marshmallows will undoubtedly bring only benefits without consequences!

Marshmallows can be not only tasty, but also healthy if you make them at home. We share with you interesting facts, cooking secrets, as well as delicious recipes for your favorite dessert.

Marshmallows are made from fruit puree, so they have very little fat. It contains pectin, which helps remove heavy metal salts from the body. Marshmallows also improve digestion and lower blood cholesterol levels. Marshmallow contains iron, phosphorus and calcium, as well as dietary fiber, which contributes to the normal functioning of the intestines. Of course, you shouldn’t get carried away with marshmallows, since they contain a large amount of carbohydrates and sugar. When buying marshmallows in stores, you need to carefully read the ingredients. Sometimes chemical flavors and dyes are added to it, which can harm the body, for example, cause diathesis in children.

Secrets of making marshmallows

If you want to make apple marshmallows, the puree should be thick. It is good to use baked Antonovka. Any apples that bake well will also work. Depending on the recipe, marshmallows harden from 1 to 5 hours at room temperature. Then the marshmallows need to be dried (again at room temperature) for about another day. This creates a thin crust. If you replace a third of the sugar in the recipe with molasses or glucose syrup, the marshmallows can be stored longer. When dry, the center will remain tender. In order for the marshmallows to keep their shape, the mass must be well whipped, like a regular protein cream. Therefore, do not waste your time and effort. The result is worth it.

All is ready!

How to make low-calorie marshmallows

You will need:

  • two slabs of gelatin (one slab corresponds to two grams of gelatin granules)
  • three teaspoons of sweetener
  • four drops each of vanilla essence and any food coloring
  • one hundred eighty milliliters of water

This dietary marshmallow is prepared by preparing gelatin. The plates are filled with cold water and left to swell for fifteen minutes. Water is divided into eighty and one hundred milliliters. A smaller amount remains in the bowl, a larger amount is brought to a boil, sakhzam, gelatin, dye and vanilla essence are added.

When thinking about how to make marshmallows fluffy and tender like in the store, keep in mind that you are unlikely to be able to beat the mass so well with your hands, so mix the remaining water and the boiled gelatin mass in a blender. You will have to spend about fifteen minutes whipping until you get “snow.”

Now you can form small portions of sweets using a pastry syringe. Don't forget to place the marshmallows in the refrigerator for two to three hours to harden.

The marshmallow turned out dense, tasty, with a rich currant flavor, but cooking will require some skill.

I experimented for about two weeks before I came to this option, I think it will be useful for those who, like me, are seeking the “holy grail” of pp - sugar-free marshmallows.

Important: agar and its gelling ability differs from manufacturer to manufacturer, so the result may not be the same as mine if you use a different brand of agar-agar.

Erythritol has a remarkable ability to maintain structure (like sugar), so replacing it with another sweetener will not work.

Ingredients

  • Agar-agar “Pudov” 10g.
  • Egg white C0 30g.
  • Applesauce “Fruto Nyanya” 250g. (reduces to 100g)
  • Frozen currants 300g. (reduce to 80g)
  • Erythritol (with sucralose and stevia) 100g.
  • Water 60g.
  • Sahzam. ~ 25g. Sahara

Requires 1.5 hours, 12 servings. KBZHU one: 23 kcal Preparation

  • Boil the applesauce over low heat or in the microwave until it reaches 100g. I used sugar-free baby puree, you can take 4-5 apples, bake them, puree them, rub them through a sieve - the result will be the same.
  • Soak the agar in 60g. water, set aside.
  • Defrost the currants in the microwave, puree, rub through a sieve (about 200g will remain), and boil to 80g.
  • Place a saucepan with currant puree, agar and 70g on the stove. erythritol, bring to a boil over low heat.

The mixture is very thick, so be careful not to burn. Since I don’t have a thick-bottomed saucepan, I just put a regular one in a frying pan and boil it in it. It’s very convenient to do this for making custard, for example.

  • Beat the egg whites, add 30g. erythritol, beat until soft peaks form.
  • Add cooled applesauce to the whites and beat.
  • After a couple of minutes, add thick berry syrup little by little, do not pour it onto the mixer beaters! Beat until stable peaks form.

The mass begins to thicken. I advise you to place the container on your lap to control the temperature - the agar hardens at room temperature. As soon as the container is no longer warm, it’s time to remove the marshmallows.

  • Transfer the mixture into a pastry bag and place on baking paper or a silicone mat. This needs to be done quickly!
  • Dry at room temperature overnight, fold the halves one next to the other, sprinkle with powder or starch using a brush as desired. Enjoying homemade healthy marshmallows.

Yes, since it contains no fat, and the calorie content ranges from 300 kcal per 100 grams of product. For dessert, this figure is relatively small. Marshmallows are also valuable due to the protein that nourishes the muscle tissue of the body, although there is not as much of it in the composition as we would like. A large amount of carbohydrates, of course, will turn off those who adhere to radical weight loss methods.

However, it is for this reason that marshmallows are an excellent product for weight loss that is recommended to be included in breakfast. Then the energy obtained from carbohydrates will last until the evening. But do not forget that during the day you will still get a lot of calories from foods during main meals. This should be taken into account when creating a diet aimed at reducing fat mass.

Of course, you can eat marshmallows while losing weight. But in this, as in any other matter, moderation is important. You cannot eat a kilogram of this delicious sweetness and hope that the resulting calories are consumed by the power of thought. By including an airy dessert in your diet, you need to increase your physical activity on this day. Go to work or school a little earlier, go for a walk after a delicious breakfast. If possible, it is useful to go for a light jog.
