  • Chopped pistachios – 1 tbsp.

Peel the apples and remove the core. Cut them into slices, put them in a deep bowl, and pour lemon juice over them. Remove the seeds from the grapes, mix with apple slices, and pour over the pear liqueur. Cover the dishes and leave the fruit to soak for half an hour. Serve dessert in bowls, sprinkled with chopped nuts.

JELLY WITH GRAPEFRUIT

  • Small grapefruits – 6 pcs.
  • White gelatin – 4 leaves
  • Orange liqueur – 4 tbsp.

Squeeze the juice from two grapefruits, strain it through a fine sieve, pour into an enamel pan, and heat. Peel the remaining grapefruits. Free the slices from captivity. Place the resulting pulp on a flat plate in the shape of a star. Soak the gelatin sheets in water, then, without squeezing, place them in hot juice and pour in the liqueur. Dessert is a dish that concludes a meal and creates a particularly pleasant taste sensation. Often desserts are various gourmet dishes and sweet delicacies. However, sweets in excessive quantities are not healthy, especially for those who care about a slim figure, because sugar contributes to weight gain (which leads to other unpleasant consequences for the body). And yet, this state of affairs is not a reason to refuse desserts.

HOW TO PREPARE DIET DESSERTS?

The recipes for these dietary desserts can be recommended both for weight loss and simply for a healthy diet, including for children.

Basic principles for preparing dietary desserts:

  • we ignore or minimize “short” carbohydrates (including sugar or refined fructose);
  • We try to avoid combining “short” carbohydrates with fats whenever possible.

Dairy products, such as cream, sour cream, natural unsweetened yogurt and cottage cheese, are an excellent basis for healthy dietary desserts.

Regarding the fat content of dairy products: according to recent scientific research, it is considered erroneous to believe that for preparing dietary dishes it is better to use dairy products with minimal fat content (among other things, they usually taste disgusting). Use medium-fat dairy products, without any flavoring or other chemical additives.

To prepare dietary desserts from cottage cheese, two main preparation methods can be recommended:

  • “cold” method, that is, mixing cottage cheese with other crushed products without further heat treatment;
  • preparing cottage cheese-based casseroles with various flavor and texture fillings.

Dietary cottage cheese dessert - recipe

Ingredients:

  • medium fat cottage cheese – 200 g;
  • dried fruits (dried apricots, raisins, prunes, etc.) – about 100 g;
  • any chopped nuts.

Preparation

If the cottage cheese is dry, add a little sour cream, cream, or unsweetened yogurt. Dried fruits should be steamed in boiling water for 10-15 minutes, then drained and rinsed again with boiled water. We remove the pits from the prunes; the dried apricots and prunes can be chopped. Add dried fruits to the curd mass and mix. If you want something sweet, add 1-2 tbsp. spoons of natural flower honey. According to the season, instead of dried fruits, we add fresh fruits and berries to cottage cheese desserts.

To prepare the casserole, we use the same curd mixture, only we exclude honey from its composition (during heat treatment it forms toxic compounds). We include 1-2 chicken eggs, a little wheat or oatmeal flour and/or cereal flakes soaked in milk. Before filling the baking dish with the mixture, grease it with butter. Bake in the oven for 25-35 minutes at a temperature of about 200 degrees C.

DIET DESSERTS

Diet desserts do exist. The main thing is not to confuse business with pleasure, and not to get carried away with sweet dishes, because not a single healthy nutrition system considers them the basis of the diet. No matter how low-calorie your sweets are, try to stick to the norm - no more than one sweet dish a day if you are physically active, or one or two desserts a week if you have not yet become friends with sports. Well, the basic rule of dessert diets sounds something like this: “Do not combine fat and sugar in one dish, use only natural products, if possible, add sources of protein, and do not overeat.” So, let's learn how to cook the right sweets.

RECIPES OF DIET DESSERTS

For cream and panna cat lovers:

Curd dessert with baked apples, 250 kcal, 18 g protein.

For 1 serving: 1 large red apple, 150 g 0% cottage cheese, a quarter teaspoon of cinnamon.

Peel the apple and remove seeds, cut into slices and bake for 1-2 minutes in the microwave at maximum power. Sprinkle with cinnamon and mix with cottage cheese until smooth. You can add 1 teaspoon of honey, this will increase the amount of carbohydrates and increase the calorie content by 20 kcal.

Diet panna cotta, 260 kcal, 18 g protein, 0 g fat.

For 4 servings: 1 packet of fruit diabetic jelly with fructose, 400 g of low-fat cottage cheese, 200 g of any berries, 1 tablespoon of fructose, whipped low-fat cream for decoration, 4 tall glasses or bowls for desserts.

Homemade ricotta with fruit, 270 kcal, 18 g protein.

For 4 servings: 400 g 0% cottage cheese, a glass of milk, a pinch of cinnamon, 100 g dried apricots, 1 banana.

Soak dried apricots in milk for half an hour. Beat cottage cheese with banana and cinnamon using a blender or mixer. Add the milk-apricot mixture and stir again. Place in molds and leave in the refrigerator for 2-3 hours.

For cookie lovers:

Homemade granola, 320 kcal per 100 g of product.

For 4 servings: 2 tablespoons of oatmeal, 1 tablespoon of sprouted wheat, 1 tablespoon of bran powder, 100 g of dates, raisins, dried apricots or prunes, 3 tbsp. olive oil, 1 tablespoon slivered almonds, cinnamon, a little salt, 1 tablespoon agave syrup or maple syrup, 1 tablespoon water.

Preheat the oven to 130 degrees. Grease a baking sheet with oil. In a bowl, mix dried fruits, nuts, bran, wheat and cereal, pre-soaked in water for half an hour. Spread the mixture in a thin layer on a baking sheet. Heat the water along with the butter and syrup in a water bath and pour this “sauce” over the granola on a baking sheet.

Bake for 15-20 minutes until the “leaf” is dry. Carefully cut into squares. Serve with skim milk for tea.

Fitness “cookies”, 260 kcal per 100 g of product.

2 bananas, 100 g oatmeal, soaked in water the night before, 2 eggs, 200 g low-fat cottage cheese, honey or agave syrup for soaking, 2 tablespoons wholemeal wheat or oat flour, a little lemon juice.

Beat eggs with banana, gradually add cottage cheese and finally add oatmeal and flour to the mixture. Mix baking soda with lemon juice and add to the mixture. Mix well again. Using a dessert spoon, place the dough onto a baking sheet covered with baking paper. Bake in a preheated oven at 180 degrees for 20 minutes. Cool. If desired, brush the halves with honey or agave syrup and glue them together.

“Quick Cake”, 288 kcal per 100 g.

Half a glass of bran powder, 200 g of prunes or dried apricots soaked the night before, a quarter glass of sesame seeds, 400 g of low-fat cottage cheese, 3 bananas, any fresh fruit or berries for decoration.

Grind prunes or dried apricots together with water in a food processor. Add bran powder to the mixture and mix. In a separate bowl, mix cottage cheese and bananas. Cut fresh fruit into slices. In a large salad bowl, place the bran mixture and curd cream in layers, sprinkle each layer with sesame seeds. Sprinkle sesame seeds on top of the “cake” and decorate with fresh fruits or berries. Leave in the refrigerator for 1-2 hours. Serve with natural yogurt and cinnamon.

DIET DESSERTS FOR FANS OF LOW CARBON DIETS

For the “dough”: 2 tablespoons of oat bran for baking (in the pharmacy or online stores for the Dukan diet), 1 tablespoon of rye or wheat bran, you can grind crispy bran from the pharmacy, 4 egg whites, 1 egg, baking powder, vanilla stevioside liquid or any other sweetener you use + vanillin, 1 tablespoon of skim milk powder, 2 tablespoons of low-fat creamy cottage cheese.

For the filling: 200 g low-fat cottage cheese, stevioside or other sweetener. Optional: cocoa, artificial flavorings, cinnamon.

Mix the ingredients for the filling with a mixer and reserve. To knead the dough, first beat the whites, add baking powder and sweetener, then the egg, cottage cheese, and finally both types of bran. You should get a relatively thick dough. Pour the filling into the muffin tin until 2/3 of the tin is filled. Bake for 10 minutes at 180 degrees, then remove, carefully place the cottage cheese on top, and bake for another 10-12 minutes without changing the baking temperature.

For the dough: 125 g of soft cottage cheese with a high protein content, preferably 0%, 4 regular eggs, or an egg substitute for baking, 2 servings, vanillin, sweetener.

For the filling: 125 g cottage cheese, vanilla or vanillin, sweetener, optional nut-flavored coffee powder (Nescafe Taster's Choice or any other similar, 1 package, some types contain dextrose), or any version of sugar-free cocoa powder.

Beat eggs, add cottage cheese, stir, add sweetener. Take a sheet of parchment for baking, carefully place the curd mass on it so that the thickness of the layer is uniform and no more than 1 cm. Bake for 10-12 minutes at 200 degrees, in principle, it can be longer, depending on the oven. Next, remove the cake and cover with a towel until cool. Mix the ingredients for the filling, grease it, carefully roll it up, place it on a plate, seam side down, and cool.

Curd and chocolate soufflé

Sponge cake: 1 tablespoon of cocoa powder without added sugar and dextrose (“Russian” or “Golden Label”), 2 eggs, 1 tbsp. l. milk or water, 1 tbsp. l. low-fat cottage cheese, 2 tbsp. l. oat bran and 1 tbsp. l. wheat bran, baking powder.

For the soufflé: a pack of cottage cheese 200 g, low-fat, vanillin, gelatin, half a packet, sweetener.

Pour gelatin with warm water, place in a food processor, stir for 2-3 minutes at medium speed. Leave to swell. Mix the ingredients for the dough - start beating the eggs, add cottage cheese and baking powder, then cocoa powder, finally bran, add milk if necessary.

Spread a sheet of baking parchment on a baking sheet and spread the dough into a relatively thin, 1.5-2 cm layer. Bake for 10 minutes at 200 degrees. Leave to cool at room temperature. Stir the gelatin again, add cottage cheese, stir until smooth, add sweetener. Place the mixture in a rectangular shape, cool, and leave to harden. Then cut the cake in half, place the mixture on one sheet, cover with a second sheet, press a little, and cut into portioned “cakes”.

200 g of low-fat creamy cottage cheese, flavored stevioside or just stevia plus vanillin, a quarter of a packet of gelatin.

For glaze: 1 tsp. instant coffee, 2 tbsp. l. milk and 1 tbsp. l. low-fat cottage cheese.

Dissolve gelatin in water according to instructions (you can use agar if you have it). Next, stir the remaining ingredients into the gelatin mass, you can beat a little with a blender. We make bars from the curd mass and put them in the refrigerator for 2 hours. Combine the ingredients for the glaze and stir until smooth. Then pour the glaze over the bars and leave them in the refrigerator for 20 minutes to harden.

Cheesecake

10 eggs, 1 kg low-fat creamy cottage cheese, 3 tbsp. corn starch, 1 tsp. instant coffee, 2 tbsp. cocoa powder without added sugar, sweetener, 1 glass of natural low-fat unsweetened yogurt, vanillin.

Beat eggs, add cottage cheese, starch, and other ingredients, stir. Place in a round pan, bake at 170 degrees for about 1.5 hours.

For pancakes: a tablespoon of cornstarch, 2 whole eggs, a third of a glass of skim milk, baking powder on the tip of a knife.

For the filling: 500 g low-fat cottage cheese, 3 eggs, sweetener,

Mix all pancake batter ingredients until there are no lumps. Grease a frying pan with a ceramic coating or a pancake maker with olive oil and use a brush. Carefully fry thin pancakes.

Beat cottage cheese with 1 egg and sweetener. Cool the pancakes, fill them with cottage cheese, roll them into tubes, and place them in a round pie dish in a spiral. Beat the remaining 2 eggs with sweetener and pour them over the pie. Then place the pan in the oven and bake at 180 degrees for about 20 minutes.

Lemon cookies

Zest of 1 lemon, 1 teaspoon lemon juice, natural sweetener, 50 g oat bran, baking powder, 2 eggs.

Using a coffee grinder, grind the bran to the consistency of flour. Use the finest grind, approximately 2-4 minutes. Next, mix the “flour” with the pre-chopped zest and baking powder and leave. Separate the whites from the yolks. Beat the whites into a foam, add lemon juice and sweetener, beat again until the mixture becomes fluffy, add the yolks, mix, and add the “flour” in a thin stream. Stir, bake in muffin tins at 180 degrees for 20 minutes.

Probably because only their baked goods have the taste of childhood :)

Recently, the children asked me to bake them “granny” pies with potatoes.. In fact, there can be a lot of fillings besides this one - as children we really loved them with sweet cottage cheese, with pumpkin, with green onions and eggs, with buckwheat, mixed with fried onions and mushrooms.. But my children love them with potatoes, mashed into mashed potatoes and mixed with onions fried in butter.. I divided the filling into two parts (in the second part of the filling I put some mushrooms so beloved by the boys).

The dough for such pies is prepared quite simply:

in one container, mix two cups of flour with 0.5 teaspoons of salt, 0.5 teaspoons of soda (or 1 teaspoon of baking powder).

In another container, beat 1 egg, a little less than half a glass of vegetable oil, 1 teaspoon of 9% vinegar, half a glass of water.

Gradually pour the liquid part into the flour and mix. Quickly knead the dough into a smooth and pliable dough (if necessary, add flour to the desired consistency). Cover the dough with film and put it in the refrigerator for about an hour (by the way, grandma prepared it in advance for our arrival, because the dough can easily be stored in the refrigerator for up to 3 days).

Divide the dough into two parts, roll each of them into a very thin large layer. Place the filling closer to one edge of the layer.
