And what’s interesting is that those who couldn’t stand the semolina porridge spread on the plate devoured the pudding on both cheeks. It would seem that the same products are milk, sugar and semolina. But what does it mean to cook and serve differently? So treat your family to childhood memories for breakfast or dinner.

Ingredients

  • semolina – 150 g;
  • granulated sugar – 1/2 cup;
  • vanilla sugar – 5 g;
  • milk (fat content 2.5%) – 500 ml;
  • chicken eggs – 1 pc. (+1 yolk);
  • butter - for greasing the mold.

How to make semolina pudding

Pour semolina, sugar (regular and vanilla) into a bowl and mix everything thoroughly so that the bulk components are evenly distributed among themselves. At this stage, you can also add just a little ground cinnamon, but do not overdo it so that the aroma does not turn out too cloying in combination with vanilla sugar.

Pour milk into a saucepan and bring it to a boil. Do not take a product that is too fatty. If it so happens that the milk is homemade and full-fat, then dilute it a little with water (you will need about 50 ml). As soon as the milk begins to boil, pour the sugar-semolina mixture into it.

Turn the heat to low and cook the semolina for 5 minutes, stirring constantly. For pudding it should be thick enough.

Let the semolina porridge cool slightly, beat in the raw egg and mix well. In the future, you will need another egg yolk, and if you have nowhere to use the white from it later, you can also add it to the semolina porridge at this stage.

Take a baking dish, grease it with butter, or line it with baking paper. Transfer the semolina mixture and smooth it out.

Lightly beat the egg yolk and brush the surface of the semolina with it (this step is optional; you can do without lubrication).

Preheat the oven to 180 degrees, place the mold in it for 30 minutes. The baking time depends on your oven; as soon as you see that a golden crust has appeared on the surface, you can remove the finished semolina pudding.

Now it is very important to let the pudding cool thoroughly (at least 4 hours). The ideal option would be if you prepare it during the day for dinner or in the evening for breakfast. Cut the finished dessert into portions, transfer to saucers and pour fruit jam, berry syrup or cherry jelly on top. You can sprinkle with powdered sugar.

  • Cottage cheese - 200 gr.
  • Eggs - 1 pc.
  • Sour cream - 2 tbsp. for gravy
  • Sugar - 2 tsp.
  • Butter - 1 tsp.
  • Breadcrumbs - 1 tbsp. l. for sprinkling the mold.

This is another one that is suitable for children from 1 year. Curd pudding is much softer and juicier in comparison, so kids can easily chew it even with a small number of teeth in their mouths.

1. Dairy products for pudding must be fresh. For children, it is better to buy homemade cottage cheese, sour cream, butter and eggs from a trusted person. If store-bought cottage cheese, give preference to medium-fat varieties (optimally 9% fat content).

2. Rub the cottage cheese through a sieve until it becomes fine and porous.

3. Mix the yolk with sugar and grind.

4. Pour the mashed yolk into the cottage cheese.

5. Beat the whites into thick foam. To make it faster, you can add a little salt.

6. Add protein foam to the curd mass and mix gently.

7. Place the curd mass in a mold previously greased with butter and sprinkled with breadcrumbs. If you use a silicone mold when baking, greasing and sprinkling is not necessary.

8. Bake the curd pudding in the oven at 180 degrees for 30 minutes.

9. Serve the finished cottage cheese pudding with sour cream.
