Ingredients:

  • chicken breast – 400 g;
  • quiche-mish grapes of 3 colors – 15 pcs each;
  • hard cheese – 150-200 g;
  • boiled eggs – 4 pcs;
  • pickled champignons – 10-15 pcs;
  • mayonnaise – 200 ml;
  • garlic - 1 clove;
  • basil – 3 leaves;
  • lettuce - 1 bunch.

Cooking method:

  1. Cool the chicken breast, boiled until tender, and separate into fibers or cut into strips.

Hello my dear readers! Are there salads on your holiday menu that don’t get boring and “live” happily ever after? I have! I found him a decade and a half ago on the legendary Cooking forum. This is Tiffany salad with grapes and chicken.

How the salad with Tiffany grapes has changed over the many years of living in my kitchen

Tiffany salad is prepared with chicken and grapes. In the original version, fried chicken breast flavored with curry seasoning was used as “chicken”. Not a bad option if you know how to cook dry meat so that it is juicy.

Lately, instead of breast, I take boiled meat from drumsticks, thighs, or make chicken ham from the breast and use it to make a salad. The most economical and zealous option is to put chicken meat from the “backs” into the salad after preparing the broth. I recommend that everyone who cooks noodle broth for the holiday take a closer look at it.

Tiffany's recipes often include nuts - almonds, walnuts, hazelnuts. I don't put them in. But I have a completely “magic” ingredient that gives the salad an enchanting, incomparable taste. This ingredient is called “chaman”. It can only be replaced with “utskho-suneli”. Having cooked with chaman just once, you will love this spice for life, it makes the taste of many dishes so expressive.

I rarely prepare mayonnaise salads. It’s best to season them with homemade mayonnaise, but in a hurry I sometimes use a good store-bought mayonnaise (there are practically no good or excellent store-bought mayonnaises).

The authentic recipe contained exclusively emerald-colored grapes.
I made my first attempts exclusively using Arcadia or Laura grapes. But now I use any large, tasty, beautiful grapes. Sometimes you can’t get one and you have to choose the best one from what is available on the shelves.

The original called for layering lettuce on lettuce leaves. I do this very rarely. Salad leaves, as a rule, remain uneaten and are thrown away, which I absolutely do not like.

The most favorite holiday is approaching - New Year. Every housewife thinks about what to cook deliciously for the New Year's table. Our women's special love is festive puff salads. Today we will prepare one of them - Tiffany salad with chicken and grapes. The recipe will be presented in two versions - classic and adapted to the tastes of my family.

A girl under the nickname “Tiffany” casually mentioned the recipe for her favorite salad on one of the popular culinary forums, and the real Tiffany boom began! The salad was prepared according to the classic recipe, many variations were created, replacing some components with others, and introducing new ingredients (mushrooms, prunes).

Only one ingredient remained unchanged - grapes. But, over time, instead of green, they began to use beautiful, tasty grapes of any color.

There were funny stories with the name itself - Tiffany. It is very pretentious, unusual, and for some, completely unacceptable. One Orthodox priest I know was incredibly proud of his “mother’s” culinary abilities. The special pride of the faithful friend of the clergyman was the signature salad “Feofaniya”!

First, let's look at the classic recipe. The girl who composed it didn’t even give clear proportions of how much to use. Chicken (breast), boiled eggs, cheese, almonds, mayonnaise, lettuce, green grapes for decoration. The following proportions have been crystallized experimentally.

Then I will offer you my signature Tiffany Grape Salad recipe. We will show you step by step how to prepare a popular salad so that its taste is the most harmonious and delicate.

In my version of the recipe, I refused to fry the chicken fillet, as in the classic Tiffany. Most often now I use boiled chicken legs, skinless drumsticks and even soup sets to prepare salads. Boiled meat is much juicier, especially if it is cooked at 80°C.

Instead of curry seasoning, I use ground fenugreek (utskho-suneli, chaman). I don’t add almonds or nuts at all. Fenugreek has a delicate taste, similar to nutty and mushroom at the same time. This is quite enough to make the taste of salad with chicken and grapes harmonious. According to reviews from my readers, this is the version of Tiffany that they liked best.

To salt or not to salt the salad depends on your preferences. I prefer not to add salt. After all, we use mayonnaise for dressing, and it is already quite salty. I rarely put lettuce leaves - usually no one eats them, and I feel sorry for throwing away the stuff.

Ingredients for the classic version

  • Two chicken breasts.
  • 100 g hard cheese.
  • Four hard-boiled eggs.
  • Homemade mayonnaise (highly desirable).
  • Two teaspoons of refined olive oil.
  • Large emerald green grapes
  • A pinch of curry.
  • 60-80 g almond petals or roasted crushed almonds.
  • Salt.

How to cook

  • Fry chicken breast. The best way to do this is to heat a frying pan, fry the fillet sprinkled with curry and salt in refined olive or melted butter for 5 minutes on each side.
  • Turn over only when one side is completely cooked and golden brown. Leave until completely cooled.
  • Line a nice flat dish with washed and dried lettuce leaves.
  • Place half of the chicken. To do this, cut the fried fillet into small pieces or cut into larger pieces and disassemble into fibers.
  • On top of the chicken, grate or pass half the boiled eggs through a salad rack.
  • Then there is a layer of grated cheese, and on top of it you should sprinkle some almond petals or crushed almonds.
  • Repeat layers. Lubricate each layer with a thin mesh of mayonnaise. Lubricate the topmost one with a fairly thick layer of mayonnaise (without fanaticism).
  • Wash the grapes, dry them, cut them into halves lengthwise with a sharp knife, remove the seeds with the tip of a small thin knife (if desired).
  • Very compactly, berry by berry, lay out the cut grapes. Tiffany's salad with grapes is ready!

My signature Tiffany salad with step-by-step photos

Ingredients for my signature version

  • 3 chicken thighs (about 600 g).
  • 200 g hard cheese.
  • Four hard-boiled eggs.
  • Three-quarters teaspoon ground black pepper (optional).
  • Two teaspoons of fenugreek, pounded or ground in a mortar (very desirable, it determines the taste of the entire salad).
  • Grapes (depending on the size of the dish on which the salad will be laid out).
  • Mayonnaise (preferably homemade).

How to cook

Boil chicken legs in low boiling water. If you have a thermometer with instant temperature reading, you should cook at 80°C. Cool completely, remove chicken skin, disassemble into fibers or cut into small pieces.

Place the chicken on a beautiful plate or dish.

Using a salad rack, chop the eggs. If desired, three of them on a coarse grater.

Using a medium grater, grind the hard cheese, sprinkle with fenugreek and ground black pepper.

Lubricate with a continuous thin layer of mayonnaise.

We repeat everything from the beginning until the products run out, spread a layer of mayonnaise on top. We try to fold the ingredients so that we get a small dome.

We remove the berries from washed, dried grapes. Using a sharp knife, cut into longitudinal halves. Place the berries tightly over the entire surface of the salad. You can simply lay it out in rows, or you can lay it out in zigzags, segments and other patterns.

Let the salad soak in the refrigerator for several hours and serve on the holiday table. Here is a photo of the finished salad.

Tiffany salad can be stored in the refrigerator at +4°C for twenty-four hours.

My comments

  • If you have enough grapes, you can make an additional grape layer. It is better if it is made from green or pink grapes. Blue grapes produce brightly colored juice and can ruin the appearance of your creation.
  • If you prefer chicken breast, then feel free to use it, just boil or fry the fillet so that it does not become dry and tasteless
  • I highly recommend flavoring the dish with ground fenugreek. If you haven’t met him yet, then it’s time to get acquainted. You will fall in love with this spice forever!
  • Sometimes a salad with chicken and grapes includes fried mushrooms with onions, steamed prunes, mixed with crushed toasted walnuts. It also turns out delicious, but this is a very loose interpretation of Tiffany’s recipe.

What products do you need to buy to prepare the classic Tiffany salad? Firstly, Tiffany needs the main ingredient - chicken fillet, at least two pieces. You also need five eggs, two hundred to three hundred grams of hard cheese (radomer), half a kilogram of large white grapes and half a glass of walnuts.

    Tiffany salad is mixed mainly with mayonnaise - you need a small pack, no more than 200 grams. It wouldn't hurt to add a little salt. You also need to prepare curry (maximum a teaspoon), three tablespoons of vegetable oil, and, of course, fresh parsley.


    Tiffany salad, the recipe for which is very simple. It is prepared as follows:

    • First of all, boil the chicken fillet in lightly salted water. Once fully cooked, the meat is separated into fibers.
    • Next, lightly salted meat and curry need to be fried. Fry for no more than seven minutes.
    • For the appetizer, you need to prepare hard-boiled eggs, so prepare them that way.
    • While the eggs are cooling, grate the radomere on a large grater and chop the nuts with a knife.
    • Grind the eggs using a large grater.
    • Then we thoroughly wash the grapes and cut them as indicated above.

    Now after preparing the ingredients, they need to be beautifully laid out in layers on a wide plate. To begin, draw a bunch of grapes on a plate using mayonnaise (outline only).     For the Tiffany salad with prunes, the recipe for which is presented below, you need products such as almonds, no more than one hundred grams, prunes (5-6 pieces) and two hundred grams of cheese (radomer). You also need three chicken eggs, four hundred grams of meat (chicken fillet), white grapes (one hundred grams) and several sheets of lettuce plus a medium pack of mayonnaise.

    So, preparing Tiffany salad with a step-by-step recipe will help you prepare the dish correctly and preserve all the original taste. First you need to wash and fry the meat, and then cut it into medium cubes. We leave the meat and start working with prunes. Place it in water for fifteen minutes. You can add cognac to the water, literally one dessert spoon. The water for prunes should be warm. After steeping, cut it into strips.

    Now chop the nuts and grate the radomere and boiled eggs. After preparing the ingredients, arrange the lettuce leaves beautifully on a wide plate, and start layering the Tiffany lettuce on top. The first, and also the last, layer of salad is delicious prunes mixed with meat, sprinkled with grated radomere and eggs, as well as nut shavings and smeared with mayonnaise. There should be a minimum of three layers, although you can add more layers if you like. Grape berries, cut in half, are already a decoration for the salad.


    You can also make Tiffany salad with pineapples. For the Tiffany salad, the recipe with pineapples is slightly different from the same Tiffany, but with prunes. Just instead of prunes, take pineapple and cut into cubes. In this version, the meat should be fried in butter and not in vegetable oil. You can add a little chopped garlic to the meat while frying, if desired. Otherwise, all actions are similar.

    Culinary secrets of Tiffany salad

    The unique Tiffany salad (recipe, video of which you can see below in this article) has a number of secrets offered by famous chefs. Like any other similar salad, Tiffany must be saturated with the flavors and aromas of its ingredients. Therefore, it must be placed in the refrigerator for at least an hour.

    The ideal soaking time is 7-8 hours. Another tip for housewives: do not make the layers of mayonnaise thick. There are a couple more nuances that can be taken into account when preparing this salad. Tiffany's flavor mainly depends on the method of grinding the almonds. If you want to get a good rich and pronounced taste, then do not make the almonds too small. And if you chop the nuts using a blender or food processor, the salad will turn out tender and sophisticated.
