Kefir dough for flatbreads in a frying pan can be anything:

  • lean;
  • with vegetable oil;
  • with added eggs;
  • with butter and egg;
  • rich (with yeast, with the addition of butter, eggs and a lot of sugar).

There is no universal advice for preparing the base. Each option has its positive and negative sides. Unleavened dough will certainly be less nutritious. It is suitable for use during Lent. It will take a minimum of time to prepare the dish. But it is advisable to eat flatbreads made from such dough hot. Once cooled, they do not hold their structure well, quickly fall off and become stale.

Vegetable oil is designed to smooth out this deficiency. It is mixed in to give the dough more elasticity. However, this product increases the final calorie content.

Eggs are added to maintain structure. The dough becomes more homogeneous and bakes better. Ready-made flatbreads retain their softness and volume longer.

Dough with butter can rightfully be considered rich. It turns out airy and aromatic. Eggs and yeast will turn the dish into a small culinary masterpiece. Preparing the dough and other ingredients will take much more time, but at the end of the action you will get a lush, delicious snack, ready to replace a full-fledged pie.

Butter flatbreads are perfect for tea, and filled with various delicacies they will turn into a complete lunch.

The flatbread can be served in addition to the main dish. The version with lean dough stuffed with cheese and herbs will serve as a worthy replacement for a piece of Borodino bread.

Recipe for flatbreads in a frying pan with kefir and cheese

Flatbread in a frying pan with kefir and cheese is the perfect start to the day, a light snack or a real afternoon snack. They are quite easy to prepare, and the necessary ingredients are available in almost every home.

You will need two glasses of flour, which must first be sifted. The flour will be saturated with oxygen and make the dough more airy. Pour the flour into a bowl, add half a teaspoon of salt and sugar. Stir thoroughly. Make a small well in the mixture.

Grate 150 mg of hard cheese on a coarse grater. Set it aside.

Kefir must be taken out of the refrigerator in advance; it must warm up to room temperature. Its fat content can be anything from 1 to 2.5%. Measure out a glass of fermented milk drink. Stir half a teaspoon of baking soda into it. The acid in kefir is neutralized by baking powder. This is confirmed by an increase in the volume of the mixture.

In parts, about 1/3 at a time, pour kefir into a bowl of flour, gently stirring the resulting mass. Add grated cheese to the finished mixture and place it on the table to knead the dough.

Make a small depression in the resulting mass and pour 50 grams of refined vegetable oil into it. Knead the dough until it stops sticking to your hands. It should be soft enough, but not runny.

If the dough turns out hard, add a little more kefir to it. If it spreads and does not stick, add a pinch of flour. The finished dough must be wrapped in cellophane and left to “rest” for 30 minutes. During this time, the flour fibers will swell, the dough will acquire a homogeneous elastic structure and can be easily rolled out.

A long sausage with a diameter of 5-6 cm is formed from the mass, which is cut with a knife into pieces with equal sides. Balls are rolled out of them. Flatten the workpiece with your hands and bring it with a rolling pin to a thickness of 0.5-1 cm.

The semi-finished product is fried on both sides in melted butter until golden brown. Remove the finished cakes from the pan and place on a paper towel. They will be especially tasty and crispy when slightly cooled.

Lush kefir cakes in a frying pan

Kefir-filled flatbreads in a frying pan whet your appetite due to their contents. But if they are prepared empty, then all responsibility lies with the dough. In this case, it should be especially tasty and tender, reminiscent of real baked goods.

Lush kefir cakes are prepared in a frying pan with the addition of yeast. First of all, you need to prepare the dough. Pour a quarter glass of milk into a bowl. Add a teaspoon of dry yeast to it. Add a small spoon of sugar and the same amount of flour.

Mix all ingredients until smooth. Set the dough aside for about 15 minutes. During this time, the yeast will come to life and form a large amount of carbon dioxide, the bubbles of which will subsequently make our cakes tender and airy.

Break a medium-sized chicken egg into the dough. Add a tablespoon of granulated sugar. Half a teaspoon of salt, 20 grams of melted butter and a whole glass of kefir (250 ml).

Next, pour half a kilogram of sifted flour onto the table. Make a depression in it, into which we begin to gradually mix all the liquid ingredients. Pour in the kefir-yeast mixture in portions, kneading the flour in it each time.

After the dough comes together, it needs to be kneaded. It will be quite soft and porous.

Wrap the resulting semi-finished product in cling film and place in a warm place for half an hour. The dough will rise and double in volume. It will need to be settled and again left under cellophane for about the same time.

From the finished dough we will form flat cakes according to the principle as in the previous recipe. Actually, the same forming option is used for each recipe.

Fry the pastry in a dry hot frying pan until golden brown. Turn it over and bring it to readiness again, but with the lid on. During frying, the cakes will puff up and become surprisingly fluffy. Grease the finished hot delicacy with butter.

Kefir flatbreads with meat

Minced meat is one of the great filling options. Many people will like this snack. The flatbread will taste like homemade white bread.

To prepare the dish you will need 200 grams of minced meat. There is no need to fry it in advance. But be sure to add salt and pepper, mix with a chicken egg, knead and roll into balls about 5 cm in diameter. It is better to take “homemade” minced meat, consisting of half pork and beef.

Pour kefir warmed to room temperature (1 cup) into a bowl. Stir in half a teaspoon of baking powder (soda). Break one egg there. Whisk everything thoroughly.

Add half a small spoon of salt to the resulting mixture. Add two tablespoons of vegetable oil to give the dough elasticity. Stir the mixture. Pour two cups of sifted flour in portions. At the same time, stir everything thoroughly.

Place the lump on the table and prepare the dough. Wrap the thoroughly kneaded semi-finished product in film. Cover with a towel. Leave for 30-40 minutes at room temperature.

Form the dough into balls approximately equal in size to the minced meat balls. Roll out into flat cakes to a thickness of 1 cm. Place the filling in the middle. We collect and pinch the edges. Flatten the workpiece with your hands. Place the glued side on the table and roll it out again to a thickness of half a centimeter.

To prepare the filling you will need:

Cut the finished dough into pieces of the same size and roll it into balls. Flatten them into flat cakes. Place the cheese filling in the middle. We assemble and glue the edges. We stretch the workpiece with our hands. And roll it out with a rolling pin into a thin large cake.

Fry on both sides in a dry frying pan. We do not close the lid. The tortillas will swell, so prick them with a fork while frying. Coat the hot appetizer with butter on all sides. We invite our relatives to the table and enjoy the dish.

Kefir flatbreads

4.3 (86.67%) 3 votes

And I'm back with flatbreads. Well, what can you do - the heat makes its own adjustments to the menu, you don’t want to bake bread, and you can’t live without it. This time I made kefir cakes in a frying pan; I think the recipe with photos will be interesting to all lovers of quick baking. The dough is perfectly obedient, not capricious at all. I rolled it out and onto the frying pan. The flatbreads are very fluffy, with bubbles and a thin crispy crust. Kefir is not necessarily fresh; the more sour it is, the tastier and fluffier the cakes. You can replace it with sour milk or yogurt. In general, a simple and quick recipe for kefir flatbreads will be useful not only in the summer.

Flatbreads are fried on kefir in a frying pan very quickly. Literally a couple of minutes on each side - and you can shoot. Make two servings at once - they will scatter instantly, they won’t even have time to cool down!

Ingredients

To prepare kefir flatbreads you will need:

  • wheat flour – 400 g;
  • low-fat liquid kefir – 250 ml;
  • Sunflower oil – 2 tbsp. l. in dough + for frying;
  • large egg – 1 piece;
  • fine table salt – 1 tsp (more is possible, up to 1.5 spoons);
  • granulated sugar – 1.5 tsp;
  • soda - 0.5 tsp;
  • vinegar for extinguishing - 1 tbsp. l.

How to cook kefir flatbreads in a frying pan. Recipe

There is no need to beat or heat anything, the dough is kneaded in a matter of minutes. I pour a glass of kefir into a deep bowl and break an egg.

I add salt and a little sugar to balance the taste. I recommend adding more salt, one spoon was not enough for us, the cakes turned out a bit bland.

While pouring in the sunflower oil, I vigorously work with a whisk, whisking all the ingredients.

I sift a little flour, about a third of the total amount. I stir, at this stage you need to slightly thicken the kefir to add slaked soda.

I pour the soda with vinegar, and as soon as the reaction passes (the bubbles disappear) I add it to the dough. You can pour in earlier, before adding the flour, and leave for a few minutes.

After two or three minutes, when all the ingredients “make friends,” add more flour and stir. Add in portions until the mixture thickens.

I pour the remaining flour onto the board, lay out the dough and quickly knead by hand.

When kneading, I use flour very sparingly; under no circumstances should the dough for kefir flatbreads be made dense, otherwise it will be difficult to roll out. The bun will be very soft and a little sticky.

In the photo you can see how dense the dough is: elastic, soft, stretches easily. If it breaks, it means there is too much flour, add a little kefir and mix. After kneading, I leave it to rest for half an hour, covered with film.

I divide the bun into equal pieces and cut it on a board with lightly dusted flour.

Then I round each one, rolling it into a bun and kneading it slightly. This will make it easier to stretch to the desired thickness and shape.

You can roll it out with a rolling pin, but I find it easier to use my hands. I knead from the middle to the edges, making the size according to the diameter of the frying pan (about 15-20 cm).

So that when frying kefir cakes in a frying pan they do not swell and fry evenly, I prick them with a fork.

I heat the frying pan well, pour 0.5-1 cm of oil, not too much. I place the workpiece in hot oil and turn the heat down to less than medium. I fry on one side for two or three minutes until the top is the same as in the photo - fluffy, with bubbles.

Using a spatula, I turn it over. The second side takes the same amount of time to brown.

The flatbreads turn out very soft and not at all oily. There is no need to put it on a paper towel, I immediately transfer it to a plate, cover it so that the heat subsides a little, and the next one goes into the frying pan.

The process of preparing kefir flatbreads in a frying pan is continuous and very fast. While one is roasting, I roll out the other. In about 15 minutes, a pile of fluffy golden brown cakes will be ready. Help yourself! Your Plyushkin.
