A meat dish like meatballs has a very juicy taste. It’s not for nothing that it is mentioned even in the children’s fairy tale about Carlson as the main character’s favorite treat. Meatballs are easy to bake or stew, but it's even easier to cook meatballs with gravy in a slow cooker. You will learn how to do this from several original recipes below.

Recipe for meatballs with gravy

If you are worried about whether your multicooker has a suitable mode for cooking meatballs, then you are in vain. Any programs are suitable, such as “Baking”, “Stewing”, “General” or “Multi-cook”. Your multicooker will definitely have one of these modes, be it Philips, Polaris, Redmond, Panasonic, or even a model such as a multicooker-pressure cooker. A more dry side dish for meatballs would be suitable, for example, potatoes or buckwheat.

In tomato sauce

The classic recipe for meatballs in a slow cooker involves cooking them in tomato sauce. For such a dish you will need the following list of products:

  • onion – 1 pc.;
  • tomato paste – 2 tbsp. l.;
  • sour cream – 2 tbsp. l.;
  • flour – 2 tbsp. l.;
  • egg – 1 pc.;
  • rice – 0.5 tbsp;
  • minced meat – 0.5 kg;

  4. Prepare the gravy: dilute the flour with cool water, then add sour cream, cream and tomato paste to the mixture. Mix the ingredients.
  5. Pour the prepared mixture into the bowl.
  6. Cook by turning on the “Stew” mode with the lid closed. Time – approximately 1 hour.

In sour cream sauce

The gravy for meatballs does not have to be made from tomato paste. You can experiment with it, so the following recipe requires slightly different ingredients:

  • chopped minced meat – 0.5 kg;
  • egg – 1 pc.;
  • onions – 2 pcs.;
  • sour cream – 200 g;
  • flour – 1 tbsp. l.;
  • water – 1 tbsp.;
  • carrots – 2 pcs.;
  • rice – 0.5 tbsp;

Meatballs in sauce are prepared according to the following instructions:

  1. Thaw the meat in advance, beat it so that the meatballs hold their shape well.
  2. Cook the rice until half cooked, add a little salt to the water, and cool it.
  3. In a frying pan or using a multi-cooker bowl, fry the chopped onion and grated carrots until golden.
  4. Add half of the fried vegetables to the minced meat along with the rice. Season everything with salt and spices.
  5. Form meatballs, bread them with flour.
  6. To prepare creamy gravy, combine water with sour cream.
  7. Add flour to the remaining vegetable frying, fry a little more, then place the meat “lumps” in the bowl.
  8. The last step is to pour in the sour cream sauce.
  9. Extinguish in the same mode for 60-65 minutes.

No rice

You already know how to cook meatballs with rice, but what to do if you don’t find this grain at home? Don't panic, because you may not even use it. Only the following ingredients are required:

  • sour cream – 0.1 l;
  • milk – 0.2 l;
  • dry basil and paprika;
  • tomato paste – 2-3 tbsp. l.;
  • tomatoes – 6 pcs.;
  • pork with fat – 0.5 kg;
  • garlic cloves - 2-3 pcs.;
  • loaf – 2-3 pieces;
  • onion – 1 pc.

The method for making meatballs in a slow cooker without rice includes the following simple cooking steps:

  1. Break the bread slices into pieces and pour milk over them.
  2. Rinse the pre-thawed meat and cut into cubes.
  3. Using a blender or meat grinder, process the meat, add squeezed bread to it, sprinkle with salt. Make meatballs.
  4. For the gravy, cut the tomatoes and onions into large slices, and chop the greens and garlic. Grind all ingredients in a blender along with sour cream, spices and paste.
  5. Pour the prepared gravy over the meat balls placed on the bottom of the multi-cooker bowl.
  6. Extinguish in the same mode for about 1 hour.

Beef

Another way to prepare meatballs in a slow cooker involves using minced beef as meat, which will require 0.4 kg. The remaining ingredients needed are:

  • processed cheese – 200 g;
  • hard cheese – 100 g;
  • onions – 2 pcs.;
  • water – 150 ml;
  • cream – 100 ml;
  • rice – 50 g.

Step-by-step preparation of the dish looks like this:

  1. Cook the rice until half cooked, adding a little salt to the water.
  2. Mix the minced meat with rice cereal, form “lumps”, place on the bottom of a bowl intended for a multicooker, grease with oil and select “Stew” with a timer for 40 minutes.
  3. While the meat balls are frying, mix the cream with water and finely chopped onion. Pour the resulting sauce into the meat.
  4. After a quarter of an hour, add the grated processed cheese.
  5. In 5 min. Before the sound signal indicates the end of cooking, add grated hard cheese to the dish.

Turkey

Meatballs in a slow cooker will be more tender if you use turkey meat. For such an unusual recipe, you need to prepare products from the following list:

  • egg – 1 pc.;
  • minced turkey – 0.7 kg;
  • cheese – 30 g;
  • green lentils – 0.5 tbsp.;
  • sour cream - 1 tbsp.;
  • garlic – 4 cloves.

The method of preparing the dish is based on several stages:

  1. Add an egg, 2 cloves of crushed garlic, and spices to the minced meat. Add the washed lentils there and mix thoroughly.
  2. Place the molded balls in a bowl, add sour cream combined with the remaining garlic.
  3. Grate the cheese and sprinkle it on top of the meatballs.
  4. Having selected the “Extinguishing” mode, turn on the timer for 1-1.5 hours.

How to cook fish meatballs

Dinner or lunch of meatballs in a slow cooker turns out to be especially healthy if you cook them from fish fillets. The following products are needed:

  • egg – 1 pc.;

  • onions – 2 pcs.;
  • fish fillet – 0.6 kg;
  • tomato paste – 2 tbsp. l.;
  • water – 250 ml;

Cooking process:

  1. Process the fish fillet into minced meat using a meat grinder, along with bread previously soaked in milk. Season with spices and salt.
  2. Roll the formed meatballs in flour and fry in a multicooker bowl using a little vegetable oil.
  3. Pour in the water, first dissolving the flour and pasta in it.
  4. Add chopped onion and carrot sticks. Season with more spices, if necessary.
  5. Cook for about half an hour, selecting “Stew” or “Baking”.

My baby is already a year and 5 months old (by the way, he turned 5 today), and we are slowly starting to accustom him to adult food. Of course, not fried, too salty, or heavily seasoned with spices, but simple, which can be eaten by such small children.

For example, yesterday I cooked meatballs in sour cream sauce in a slow cooker, and my son had a great dinner with them along with mashed potatoes. I took the recipe from the book that came with my Redmond RMC-PM4506, but I changed it a little because it was somewhat strange in proportions.

So, to prepare baby meatballs in sour cream sauce, you will need the following products:

- minced meat (I used pork) with onions - 400 g;
— white bread (you can add a third of it with black) — 80 g;
- a little milk - 20 ml;
- richer sour cream - 300-350 g;
- water - 300 ml;
- wheat flour - 1-2 tablespoons;
- a small piece of butter.

The recipe itself is as follows

Soak the bread in cold water for about five minutes, then pound it well with a masher or pass it through a meat grinder. Mix with minced meat and milk (if there is no onion in it, we also pass it through a meat grinder and add it). Instead of milk, you can take one egg. Salt. If desired, add spices.

Now let's prepare the sauce. Mix sour cream with water and flour.

Grease the multicooker bowl well with butter. We form small balls from the minced meat with bread and onions. Place them in a slow cooker, on the bottom, fill with a mixture of sour cream, water and flour.

Next, all this needs to be simmered. Since I have a pressure cooker (as I wrote above, REDMOND RMC-PM4506), I chose the “stew/pilaf” mode and the cooking time was 15 minutes. In a regular slow cooker, you probably need to double the time.

You probably know how to cook delicious meatballs, but you bought a multicooker and have never tried making them in this smart device. Let's correct the mistake and prepare meatballs in a slow cooker: select minced meat, rice, all other ingredients, and get started without delay.

Meat you can take any. In our family we respect pork or assorted pork and chicken. But perhaps you like lean veal, or turkey, or assorted pork and beef - take them.

Gravy- this is also important. Until I got to Greece and tried meatballs in tomato-pepper sauce, I didn’t even realize how diverse the effects of this dish are, how unrecognizable it can be. Today I prepared a sauce for meatballs using ketchup and sour cream with tasty additives.

Choosing for meatballs rice, I usually prefer evaporated grits - I like it neat and a little firm. And you decide for yourself which rice you like best. This is completely unimportant, you just need to remember that meatballs made from traditional Krasnodar meatballs and fashionable brown meatballs (“fashionable” because health is in fashion today) turn out different.

Preparation time: 20 minutes. Cooking time: 40 minutes. Servings: 7 pcs.

Ingredients

  • minced meat (pork) 500g
  • rice 150g
  • chicken eggs 1 pc.
  • onion 100g
  • ketchup 1 tbsp.
  • sour cream 2 tbsp.
  • wheat flour 1 tbsp.
  • vegetable oil 5 tbsp.
  • chopped dill 1 tbsp.
  • water 1 tbsp.
  • salt 2 pinches
  • bay leaf and black peppercorns to taste

To prepare the meatballs, we used a Brand 6051 multi-pressure cooker with a power of 1000 W and a bowl capacity of 5 liters.

Preparation

    Peel the onion and cut into small cubes. In my opinion, this is much tastier than when the onions are passed through a meat grinder along with minced meat. In the meat grinder, it releases juice, which we are forced to drain, and when slicing, all the pieces retain their integrity, taste and aroma. In a word, cutting is more natural. More correct.

    Combine minced meat, washed rice (in three waters, pay attention!), egg, salt and chopped onion in a bowl.

    Mix all the components of the minced meat by hand so that they are evenly distributed throughout the entire volume.

    Now the sauce. We combine sour cream with ketchup and flour in a bowl, trying to mix them evenly, so add the flour gradually while stirring.

    Add 1 glass of water, a little salt and dissolve all the ingredients of the sauce, stirring evenly.

    From the resulting minced meat you need to make round meatballs of any size so that they fit in one layer in the multicooker bowl.

    Pour sunflower oil into the multicooker, turn on the “frying” mode, and when the container warms up a little, lay out the meatballs.

    Fry the meatballs in a slow cooker on all sides until golden brown for no more than 10 minutes - this is necessary so that they do not lose their shape during stewing.

    Turn off the “frying” mode, add bay leaves and peppercorns to taste and fill the meatballs with sauce (a mixture of flour, sour cream, ketchup and water).

    Important: the meatballs must be at least half immersed in the sauce.
    Sprinkle them with chopped dill or parsley, close the lid and cook in the “stew” mode for 30 minutes at maximum pressure (70 kPa).

    After the multicooker beeps to indicate the end of operation and the pressure has dropped, you can serve aromatic and satisfying meatballs from the multicooker with gravy.

Cooking meatballs in a slow cooker is a pleasure. Quick, easy, and also very tasty and healthy. Just roll the meat balls, pour delicious tomato sauce over them and turn on the desired mode. But what nuances are important to consider when cooking?

Classic meatballs with tomato sauce are prepared from a mixture of several types of meat, which are processed simultaneously. It can be chicken and pork, pork and beef, turkey or rabbit - you choose. Minced chicken comes out juicier from a whole chicken carcass, but from fillet the dish will turn out a little dry. It is better to take pieces of pork that are moderately fatty, for example, use ham or neck. Beef in its pure form (especially veal) is a dietary dish, and it is important to choose the right sauce for it. In general, the number of ingredients is small, and housewives usually always have them in stock.

For the meatballs you will need:

  • Minced meat – 500 g;
  • Onion (large) – 1 pc.;
  • Rice, cooked until half cooked – 250 g;
  • Chicken eggs – 2 pcs.;
  • Tomatoes in their own juice, tomato paste for sauce – 500 g or 3 tbsp;
  • Spices and salt to taste.

Mix meat, rice, eggs, onion, cut into small cubes, salt and pepper. From the resulting mass we make balls slightly larger than a tennis ball. Roll each one in flour. Using the “Fry” mode, fry the meatballs until they have an appetizing crust, if possible, on all sides.

At the same time, mix the sauce. Ideally, these should be pureed tomatoes without skins, to which a little salt and spices are added to taste. But you can replace fresh tomatoes with canned tomatoes in their own juice, tomato juice or paste diluted in boiled water at the rate of 3 tbsp. for 250 ml. You can add cream, a couple of spoons of sour cream or a little milk to the tomatoes to give the dish a creamy hue and soften the acid that is always present in tomatoes.

The sauce should completely cover the meatballs, or even better if the meat balls seem to “float” in it: in this case you cannot skimp on the sauce, otherwise the dish will turn out dry. And also, do not forget about the size: the balls should not be huge, and should have time to cook completely. But you shouldn’t chop them up either: these are still not meatballs.

Place the meatballs on the bottom of a multi-bowl greased with vegetable oil, then pour the sauce over them. Cook on the “Stew” mode for 20-30 minutes. Serve with any side dish or on its own, topped with the prepared sauce and sprinkled with fresh herbs. Meatballs are a completely self-sufficient dish, although they go well with side dishes: mashed potatoes, buckwheat or pasta.

Recipe for hedgehogs with rice

Hedgehogs with rice are a favorite children's dish. They are especially tasty from tender minced chicken, which is rolled from several chicken parts - breasts, thighs or legs. The meatballs are molded as in the classic recipe. The difference, and a fundamental one, is in the degree of readiness of the rice. It should be almost raw, because during cooking each grain of rice swells, which is why the meatballs resemble “hedgehogs”. Long-grain cereals that have been steamed are more suitable: this reduces the cooking time.

Hedgehogs are cooked in sauce, but it’s even better to steam them and, so that they don’t turn out dry, serve with sour cream and herbs.

Meatballs in sour cream sauce in a slow cooker

Some housewives do not add tomatoes on principle, considering them too aggressive for the stomach. But sour cream 2.5% fat is a wonderful sauce that gives a creamy taste to the meatballs. To prevent the sour cream from curdling during the stewing process, you can mix it with cream and add two tablespoons of flour - this sauce will be tender, tasty and thick. True, you need to knead everything well so that the gravy does not contain unpleasant flour lumps.

Preparing the balls is very simple: we make them from minced meat, fry them (as in the basic recipe), and place them on the bottom of the multi-bowl. Cook until done using the “Stew” mode, serve the meatballs in sour cream sauce with mashed potatoes or pasta.

If desired, you can stew the meatballs under a “cap” of onions, carrots, bell peppers and herbs. But, if you fill the balls with sour cream sauce, you shouldn’t add all these vegetables: they don’t go together.

Cooking like in kindergarten - a delicious recipe

For meatballs in kindergartens, they always use either chicken or beef - pork is prohibited in kindergartens. Cooks in kindergartens also do not put eggs in meatballs, but fry onions in butter: the meat becomes juicy and sweet, which, naturally, is very much appreciated by little eaters.

Next, we “cook” in stages:

  1. Mix the minced meat well with rice and onions.
  2. Roll the balls in flour.
  3. Fry in a frying pan.
  4. Pour in sour cream sauce and add just a little tomato sauce.
  5. Simmer in the slow cooker on the “Stew” mode for 15-20 minutes.

You can serve the meatballs with small noodles, buckwheat or mashed potatoes with water: the fat content in the meatballs is quite enough.

Rolling in flour is not a necessary part of the cooking technology. But it is this stage that helps the balls keep their shape and not crack during frying and then stewing.

Option meatballs with gravy - steamed in a slow cooker

Many models of multicookers are equipped with a grate for steaming dishes. It’s easy to cook meatballs with rice in a slow cooker this way. By the way, such meat balls can include any cereal, for example, buckwheat and oatmeal. Believe me, it only enhances the taste.

Preparing the dish is simple, following these steps:

  1. We form meatballs by mixing cereals and meat.
  2. Place the balls, without dredging them in flour, on a greased wire rack.
  3. Place the sauce at the bottom of the bowl. To do this, mix tomato sauce with a couple of tablespoons of flour, spices, and salt.
  4. We cook in the “Stew” or “Steam” mode (what options do you have).
  5. Serve the meatballs sprinkled with sauce or separately.

It is better to cook the cereals until al dente. However, multi-pressure cookers manage to cook them to the desired condition. In such models they can be placed raw in minced meat.

The undoubted advantages of the cooking method are the ability not to weigh down the meat with sauce, which in other cases (say, with stomach diseases) may be contraindicated. But one way or another, our meat balls are soaked in sauce and only benefit from juiciness. This has been verified.

Minced chicken recipe

As already mentioned, meatballs in a steamed slow cooker or meatballs in sour cream sauce become much more tender if they are made from minced chicken.

What parts of poultry are best for homemade minced meat?

  1. Chicken fillet (if you are on a diet). You don’t have to put rice in this option, but add juiciness with a large amount of onion.
  2. Chicken thighs.
  3. Chicken legs, without skin.

Grind the minced meat in a meat grinder or blender, knead well, form meatballs and cook them, following the classic recipe. Serve with baked potatoes, pasta or any sugar-free porridge.

Fish meatballs with gravy - step-by-step recipe

Surprisingly, meatballs in a slow cooker turn out very unusual, tasty, and light if you replace the meat with fish. What types of fish are preferable? This is cod, pollock or haddock (if you are not too lazy to tinker with it for quality cutting). Pike perch is a good river fish for meatballs - it is meaty, bakes well, and contains few bones. And from the sea, try the greenling: here it is important to find it in extreme freshness and the latest catch.

Making fish meatballs is simple:

  1. We cut the fish, separating the fillets, grind it in a meat grinder, or grind it in a blender.
  2. Add squeezed bread crumb soaked in milk or cream to the minced fish.
  3. Form meatballs and roll them in flour.
  4. Fry in the bottom of a multi-bowl in a small amount of vegetable oil.
  5. Pour in tomato sauce.
  6. Cooking in the “Stew” mode.

It is better to serve fish balls with vegetables. In the winter season, fried cabbage - red, cauliflower or white - is ideal for fish.

When preparing minced fish, remember the rule: fish drink milk! Be sure to soak the fish in milk or add bread crumbs soaked in milk sauce. But it’s better not to put sour cream in such a dish: tomatoes are enough.

Meatballs in sauce in a Redmond slow cooker

In the Redmond kitchen assistant, with a power of 1000 W, a delicious dinner for the whole family can be prepared in 40 minutes.

  • minced pork and beef – 500 grams;
  • steamed rice – 150 grams;
  • onion – 1 piece;
  • 2 egg yolks;
  • ground pepper;
  • salt.

For filling:

  • water – 250 ml;
  • ketchup – 2 teaspoons;
  • sour cream – 150 grams;
  • sunflower oil – 5 teaspoons;
  • flour – 2 tablespoons;
  • parsley or dill;
  • black peppercorns;
  • Bay leaf.

Step-by-step preparation:

  1. Peel the onion and chop as finely as possible. You should not put the vegetable through a meat grinder along with the minced meat, as this will release too much liquid and it will be difficult to form the meatballs.
  2. Mix minced pork and beef with rice, washed in three waters and boiled until half cooked. Add yolks to the mixture, salt and pepper. Knead thoroughly so that all components are evenly distributed in the total mass.
  3. To make the sauce, combine ketchup with sour cream in a plate and carefully add flour, stirring constantly. Add salt if necessary. Pour in a glass of water at room temperature.
  4. Form round meatballs from minced meat. There should be enough of them so that the balls can fit in the multicooker bowl in one layer.
  5. Select the frying program, pour sunflower oil into the multicooker and fry the meatballs until golden brown. This will help the meat balls not lose their shape during cooking.
  6. Turn off the frying mode, add peppercorns and bay leaves. Fill the meatballs with the thick sauce at least halfway.
  7. Add chopped herbs and select “Stew” in the multicooker programs. Cooking time – up to 40 minutes.
  8. After the signal sounds that the dish is ready, the meatballs are taken out and served for dinner.
