The advantage of this method is that when you sterilize the jars, there are pans at the bottom, and the lids are also boiled. And already any.

  1. The size of the pot used depends on the number of jars. Therefore, calculate and try on yourself. Have you chosen? Great! Pour water and put on fire.
  2. Rinse and clean jars and lids with baking soda. The lids can already be thrown into the pan.
  3. Wait for the water to boil, then place a metal colander or large sieve on top. Check the structure for stability. Banks must be placed upside down.
  4. It is enough for half-liter jars for sterilization to stand for a couple for about 10 minutes, for one and a half liter jars for 20 minutes, for three-liter jars for half an hour.
  5. A sign that the jars have been sterilized are voluminous drops of water, which should be formed from steam. After waiting for the required time, carefully pick up the jars and put them on a clean non-terry towel upside down so that the droplets that appear are drained.

Sterilization of jars in water

  1. Wash jars and lids with a new baking soda sponge.
  2. To boil jars, you will need either a large pot or an enameled bucket. It all depends on your needs.
  3. In any case, fill the container with water, put the jars there, put on fire and bring to a boil.
  4. Five minutes in boiling water is enough to sterilize the jars.
  5. The jars should cool on their own, so taking them out, do it very carefully, trying not to burn yourself. Lay the container upside down on a soft towel.

Sterilization is the removal of all types of microorganisms and fungal spores from objects. This procedure must be performed responsibly, otherwise winter preparations and any other products will deteriorate and become hazardous to health.

When sterilizing by any method, in order to get an excellent result, you must adhere to the general principles:

  1. Integrity. In other words, there should be no cracks and chips on the dishes, otherwise it will be dangerous to store food in it. Damaged containers must be disposed of.

Sterilization in boiling water

This is one of the common ways to sterilize glassware at home. It is necessary to take a wide pan, fill it with water less than half the volume, and immerse the jars filled with water there.

After that, bring the water to a boil on the stove. Usually sterilized in a container with a volume of up to one liter. The operation time is 10-15 minutes from the moment the water boils.

In the oven

The next method, which is widely used by experienced housewives, is the sterilization of glassware in the oven. The difference of this method is that the use of water and steam is excluded. This is dry sterilization.

It is necessary to put the jars in a cold or slightly heated oven. If the containers are dry, they are placed upside down. Banks with residual water should be placed upside down to evaporate it. You can install several cans of different sizes at once. Place the containers on a wire rack or on a baking sheet. The oven must be heated to 150 degrees. Sterilization time, depending on the volume of the container, is 10-30 minutes.

Ferry

A proven method for preparing containers for decades is sterilizing them over water vapor. Our grandmothers also used this method. You need to take a pot or kettle.

You will also need a special stand, which can be purchased at a hardware store. The stand has a recess for one or more jars, depending on the width of the pan. In the absence of a stand, you can also use a simple double boiler or a grid that protects against oil splashing when frying.

If you are using a conventional (non-electric) kettle, the stand is not required. It is necessary to pour water into the kettle and place the jar upside down instead of the lid.

The processing time of the dishes from the moment the water boils depends on the volume of the container and ranges from ten minutes to half an hour.

In the microwave

The most modern tool for preparing cans for canning is a microwave oven. This method has many advantages. The most important of them is high speed. At the same time, there is no steam in the room in which the treatment is carried out.

To process dishes in the microwave, it is imperative to pour a little clean water into it (up to two centimeters from the bottom). Empty containers should not be placed in the microwave oven. Sterilization is carried out at maximum power for 1-8 minutes. During this time, the water will boil, and the germs on the surface of the dishes will be destroyed by steam.

The amount of dishes placed depends on the volume of the microwave oven. Two-, three-liter jars, if they do not fit, can be put on their side. At the same time, it is necessary to pour enough water into the jar so that it does not spill out.

Important! The magazine "Miss Purity" recalls that it is absolutely impossible to sterilize iron lids in this way.

In the dishwasher

This is the simplest and most effective method, but not all homes have such a device.

Banks are placed on two sliding shelves of the dishwasher. Then the machine must be set to the mode with heating to the highest temperature and turned on.

Advice! Dishwashers are much more capacious than microwaves and ovens. However, in them it is often impossible to set water heating above 80 degrees, or even less. Therefore, there are some doubts about the quality of sterilization by this method.

You can prepare food for preservation while the dishwasher sterilizes glass containers. The longer this process takes, the better.

cold way

A known method of processing containers for canning alcohol. Is it possible to find other similar means of cold sterilization at home? It is recommended to use vinegar.

It is necessary to take a half-liter jar, pour cold boiled water into it up to the shoulders. Then add 7 tablespoons of 70% vinegar. Get a sterilizing solution.

The container, as usual, must be thoroughly rinsed, then pour the resulting solution into it, close the lid and shake well for twenty seconds. After that, the solution must be poured into the next jar and the process repeated.

After sterilization of the container, it is necessary to hold it upside down for some time so that the liquid glass from the walls. The prepared solution is enough to process fifty cans.

This requires a wide pan, on the bottom of which a clean towel or any cloth is spread. Then you need to arrange the jars filled with products and covered with lids so that they do not touch each other. After that, carefully pour cool or slightly warm water into the pan, so that the water does not reach the lids by about two centimeters. Then bring it to a boil.

Advice! When pasteurizing, do not put jars on the bottom of a pot of boiling water. Due to the temperature difference, the glass may crack.

Processing time depends on the volume of cans and is approximately 10-15 minutes. Can be sterilized longer.

Then the containers with the contents must be carefully removed from the water using a special tool that is commercially available and rolled up with a machine.

When the jars are sterilized, filled and rolled up, they must be turned over and placed on the lids. Hot canned food is recommended to be placed on a wooden surface. To slow down the cooling process, the jars should be wrapped in a warm blanket or outerwear. When the blanks have cooled, you can remove them to a permanent storage place.

In order for the work to be carried out not in vain and the prepared products do not deteriorate, it is necessary to carefully process the lids.

They also need to be washed first with a sponge and soap, baking soda, or dish shampoo. After that, the lids are placed in a container of boiling water and kept for two minutes.

Lids that are used to seal canned food must be in perfect condition. On their surface there should be no traces of rust, scuffs and dents. Rubber bands must be selected according to the diameter of the lid.

The time of sterilization in the microwave depends on the number of jars that you put in the microwave at the same time, and can be up to 5 minutes.

Sterilize in the microwave quite quickly and in time, and due to the fact that many jars can be sterilized at the same time. The room in which sterilization takes place is not filled with humid air. The only downside is that the three liter jars are too tall for many household microwaves and simply won't fit.

How to sterilize jars in a steamer

We put the jars neck down in the double boiler and turn it on to the cooking mode for about 15 minutes.

The water that is poured into the double boiler begins to boil, and the cans are sterilized with this steam.

By the way, not only cans, but also lids can also be placed in a steamer for sterilization.

Sterilization in this way is very convenient. Little time and effort is wasted. But it is possible to sterilize jars in a double boiler if it is roomy enough. If only one can be placed in a double boiler, then sterilization in the microwave is faster and more economical in terms of energy costs.

How to sterilize jars in the oven

- If you plan to sterilize the jars in the oven, then after washing them, do not let the water drain from the jars, but immediately place them in the oven.

- Turn on the oven to 160 degrees.

- Banks must be sterilized until all water droplets have evaporated and the glass is completely transparent. It will take about 10-15 minutes, but don't overdo it.

How to sterilize jars in the dishwasher

I myself did not use this method of how to sterilize jars, but they say that this is also quite simple and effective.

First of all, it is necessary to check the integrity of the cans, to reject cans with a chipped neck, cracks. These jars are not suitable for blanks, it is better to throw them away or use them only as containers for storing bulk products (tea, cereals, herbs).


Then you need to check if you have lids for these jars, and how tightly they seal the jars. If you are using iron screw caps or plastic caps, it is not necessary to change them every year, but be sure to check them for tightness. Take a jar, pour water into it, wipe the jar thoroughly from water, tighten the lid as tightly as possible, turn it over and shake the jar over a paper towel. If there are drops of water on the napkin, then such a cover will not suit you, it skips.

In addition, when using metal covers, pay attention to the absence of rust spots, scratches, concavities. Damaged covers are not suitable for harvesting for the winter.

When using lids with elastic bands, pay attention to the elasticity of the elastic band, old, long-stored elastic bands tend to dry out and crack. These lids don't work either.

In all cases, the jars must be rinsed well, I prefer to do this under running water.

Ways to sterilize jars


There are several ways to sterilize jars at home.

Conventionally, they can be divided into two groups:

  • classic;
  • modern.

Our grandmothers used classical methods of sterilization.

This is the processing of cans with steam, boiling cans, processing with potassium permanganate.

Sterilization of cans with potassium permanganate

Dilute a saturated solution of potassium permanganate, pour it into clean jars, filling them halfway, then add warm water to the top, close the lid and let stand for 10 minutes. Then turn the jar over and let stand for another 5 minutes. Drain the potassium permanganate, pour boiling water over the jar and you can use it.

This method is suitable for sterilizing any jars, but at present it is almost impossible to find potassium permanganate.

Steam sterilization of cans


You will need a pot of boiling water and special tools that you can buy at the hardware store.

For many years now, an aluminum circle with a hole inside has been regularly serving me. It can be installed both small banks and large ones. Now there are already devices for 3 cans, but you can use the usual grate from the oven or the oil splash screen, which is used during frying in a pan.

To sterilize several jars, it is better to choose a pan with a wide bottom. It is enough to pour water into the pan, bring it to a boil, put the grate on top and put the jars on the grate and steam them. At the same time, the lid can also be lowered into the pan for sterilization.

The steaming time is different for cans of different sizes.

How much to sterilize jars for a couple

for 0.5 and 0.75 liters for at least 10 minutes;

for 1 liter for at least 15 minutes;

for 2 liters for at least 20 minutes;

for 3 liters from 25 to 30 minutes.

If you accidentally missed the time, then the end of the steam sterilization of the jars can be determined by the appearance of the jar. At the beginning of sterilization, the jar is covered with drops of water, when sterilization ends, the jar becomes dry.

We put the sterilized jar on a clean, better linen cloth upside down, and take out the boiled lids with a clean fork and leave it on the cloth with the inside down. In this state, the jars remain sterile for up to two days.

The advantage of this method is that jars for blanks can be prepared in advance. In addition, both large and small jars can be sterilized in this way.

Sterilization of jars over the kettle

A variation on steam sterilizing jars is sterilizing jars over a kettle. In this way, you can sterilize both large three-liter jars and small ones. Find out how to do it right in this video.

Boiling jars in a saucepan

This method is suitable for sterilizing small jars. In this way, you can process several cans at once.

Take a large saucepan, put a wooden grate on the bottom (if there is no grate, you can put a towel folded several times) and put jars on it, fill it with cold water and heat it on the stove until the water boils. After boiling, “cook” the jars for at least 5 minutes. Lids can also be sterilized immediately.

This method is good in that jars can be prepared quickly, and the downside is that such sterilization is not ideal and is only suitable for those recipes that provide for further sterilization of homemade workpieces.

The methods described above have one significant drawback for me - a lot of steam and heat in the kitchen, in addition, it is easy to scald with boiling water, so lately I prefer modern "dry" methods of sterilizing jars.

Sterilization of jars in the microwave


Pour water into clean jars, filling the jar by one third. Turn on the microwave for 5 minutes at a power of 800 watts. The water will boil, the sterilization will steam, but there will be no steam room in the kitchen.

Sterilizing jars in the microwave is one of the most convenient ways to sterilize jars, but it is mostly suitable for small jars. Bottles can also be sterilized, but you need to put them on a barrel, pouring the required amount of water.

Sterilizing jars in an electric oven


This method is convenient when you need to prepare a lot of jars. My oven immediately includes 4 three-liter jars or 12 liter jars.

Sterilization is not difficult. I put the washed jars on a wire rack in a cold oven, heat the oven to 120 degrees and hold the jars for 15 minutes, then turn off the oven.

To prevent the jars from cracking when heated, do not place the jars tightly together and do not heat the oven above 120 degrees.

Sterilization of jars in a slow cooker

It is ideal to use a slow cooker for sterilizing jars, which has a “steam” function. Pour water into the multicooker bowl, put a basket for steaming dishes, lay out clean jars and turn on the desired mode and set the time to 10 minutes.

This method is convenient in that you can immediately sterilize both jars and lids.

How to sterilize small jars

Small jars can be sterilized:

  • in boiling water;
  • in the oven;
  • in a multicooker;

  • in a double boiler;
