Pike perch goulash

Salt 600 g of pike perch fillet and keep in a cold place for 1.5 hours. Next, cut into not very large pieces, put them in a frying pan with 3 tbsp. melted butter. Then cover with a lid and simmer over low heat for 10 minutes. Now you need to pour the prepared sauce over the fish, sprinkle with crushed breadcrumbs and cook in a preheated oven for another 15 minutes. Sauce: Mix 1 tbsp. flour with 1 tbsp. oil, dilute with 1.5 cups of hot water. Stir thoroughly and boil. Stir 2 raw yolks with 0.5 cups of sour cream, add a couple of pinches of salt and pour in 0.25 cups of dry white wine. Combine with flour and butter sauce, stir thoroughly.

Pike perch with mushrooms

Cut 200 g of pike perch fillet into portions. Finely chop the onion bulb. Finely chop 100 g of fresh mushrooms. Place in a frying pan in layers: first fish, then onions, mushrooms, pieces of butter 2 tbsp. and again fish. Be sure to salt each layer, sprinkle chopped herbs on top and brush with sour cream. Simmer over low heat until done.

Pike perch in Roquefort sauce

Cut pike perch weighing approximately 800 g into small pieces. Boil in salted water with the addition of bay leaf. Place pieces of boiled fish in a frying pan, pour over the prepared sauce and bake in a preheated oven for about 5 minutes. Preparation of the sauce: grate 200 g of Roquefort cheese on a fine grater and combine with 600 g of cream.

Pike perch with vegetables

Finely chop: 1 onion, 3 cloves of garlic and ginger. Fry them in vegetable oil, then add vegetables cut into small cubes for frying: 2 carrots, 1/3 of celery root and 1 zucchini. Add a little salt and fry for about 5 minutes. Place in another bowl. Rub skinless pike perch fillet with salt and pepper and fry in the same frying pan. Next, add vegetables to the fish, pour in the sauce, sprinkle with chopped leeks and simmer for about another 7 minutes. Sauce: 3 tbsp. mix tomato paste with ½ tbsp. wine vinegar and the juice of half a lemon.

  • 1 kg of fish;
  • 1 carrot;
  • 1 onion;
  • 2 tomatoes;
  • 200 ml sour cream;
  • 30 ml olive or sunflower oil;
  • 1 tsp granulated sugar;
  • salt and spices to taste.

How to cook pike perch stewed in sour cream

How to stew pike perch in a frying pan:

  1. You need to fillet the prepared fish. To do this, it is placed on a cutting board, an incision is made along its ridge, after which the fillet is separated from the ridge. There should be no difficulties at this stage, because pike perch is not a bony fish, and the small amount of bones that remain after thinning is quite easy to remove with tweezers.
  2. The fish fillet is washed well and dried with a paper towel, cut into small pieces (up to 10 cm wide), salted, seasoned with spices and set aside.
  3. Since we will be stewing pike perch in a frying pan with vegetables, we need to prepare them. Peeled and cut into strips carrots are lightly fried in olive or sunflower oil. Add to it the chopped onion and tomatoes, which were previously blanched (the skin of the tomato was slightly cut, doused with boiling water and removed) and diced. Vegetables are seasoned with spices, 1 tsp. sugar and simmer until all the juice is gone. After this, add most of the prepared sour cream to the pan, mix everything well and remove the vegetables from the heat.

The fish, which has already been saturated with spices, is laid out on the bottom, and vegetables stewed in sour cream are laid out on top of it. All this is put on high heat, which is reduced after 2 minutes, and the dish is left to simmer under the lid for 20 minutes.

The ideal side dish for fish is potatoes, which can be baked or boiled, as well as rice. A culinary masterpiece made from affordable and simple ingredients, it is very tasty, both immediately after stewing and the next day. The peculiarity of pike perch stewed in sour cream in a frying pan is its tender, juicy meat, enriched with substances necessary for our body, with a pleasant taste and aroma.

There is one little secret. To ensure that the pieces are even and neat, they should be cut at a stage when the fillet itself has not yet completely defrosted.

If we are talking about fresh pike perch fillet, then you can even put it in the freezer for a few minutes. However, if you have a sharp knife, you can skip this point. The fillet with skin is cut into pieces of 4-5 cm.

  1. Pour refined vegetable or olive oil into a frying pan and heat it.
  2. While the oil is heating, pour flour onto a flat saucer or plate, add salt and pepper to taste. Dip the prepared pieces of fish in it and send them to the frying pan, first turning the heat down to medium level.
  3. The enveloping process itself can be modified and significantly simplified. To do this, you can pour a few tablespoons of flour into a plastic bag, adding salt and pepper. We also place the fillet pieces into the bag. After closing the bag, shake it several times so that all the pieces are well coated in flour.
  4. So far this is only a preliminary stage, and pike perch fried in sour cream is still to come. Place our fish fillet pieces into a heated frying pan so that they do not touch each other.
  5. Fry the pike perch until an appetizing crust forms on one side. Then turn it over and fry on the other side.

We select the finished fish from the frying pan and leave it in the plate for now. It's time to prepare the second component of our dish.

Making vegetable sauce

First we need to prepare our vegetables. Peel the onions and garlic. Place the tomato in boiling water for a few seconds and remove the skin. We free the bell pepper from the stalk and seeds.

  • 800 g pike perch
  • 6 medium tomatoes
  • 3 onions
  • 100 g celery root
  • 1 sweet red pepper
  • 1 small hot red pepper
  • 3 tbsp. vegetable oil
  • 3 tbsp. lemon juice
  • several sprigs of cilantro
  • 5 cloves garlic
  • 3-4 tsp. ground black pepper
  • 2 tsp salt
  • 2 tsp Sahara
  • 1 tsp turmeric
  • 1 tsp coriander
  • 1 tsp cloves (preferably ground)
  • 1 tsp cumin (cumin)
  • pinch of cardamom (optional)

Homemade recipe

  • Wash the fish, clean it, remove the head, fins and gills. Cut the meat with bones into portions and place everything in a bowl. Add lemon juice, salt, ground black pepper. Wash the cilantro, chop it and add it to the fish, mix thoroughly.
  • Place the container with the pike perch for at least 15 minutes in the refrigerator to marinate. You can leave the fish there for half an hour. Meanwhile, make cross-shaped cuts on the tomatoes and place them in a pan of boiling water for a couple of minutes.
  • After this, place them in cold water for a minute and remove the skin. Place the peeled tomatoes in a small container and mash thoroughly with a fork until pureed. Peel the onion, cut into small pieces. Peel the celery root and cut into the same pieces as the onion.
  • Heat vegetable oil in a frying pan and add onion. Fry it for a couple of minutes, stirring, over medium-high heat. Then add celery root and stir. Fry for a couple more minutes.
  • Peel the garlic and crush it into a small container using a garlic press. If the red pepper is very hot, remove the seeds, but you don’t have to do this. Puree it with a blender along with the garlic. You can simply grate the red pepper on a fine grater.
  • Peel the sweet pepper (Bulgarian) from seeds and grate it on a coarse grater, mix with hot pepper and garlic. Add the resulting vegetable mixture to the pan and stir.     • 2-3 small ginger roots;
    • 2-3 tbsp. l. tomato paste;
    • a few pinches of salt, ground black pepper and spices for the fish.

    Naturally, before you start cooking pike perch stewed with vegetables, and even more so pike perch with potatoes in a slow cooker, you need to carefully prepare the available products.

    1. Potatoes used in the preparation of a dish such as pike perch in tomato with vegetables must be thoroughly washed under running cold water, then peeled and cut into arbitrary pieces.
    2. Wash the carrots, peel them using a special knife and cut into small cubes.
