  • 1 teaspoon cinnamon (without a slide, you can use a cinnamon stick)
  • 2 tbsp. spoons of sugar (I added 3 tablespoons)

You can add other spices if you like. I didn't add anything other than cinnamon and ground black pepper.

To make ketchup, I took “cream” tomatoes, they have very little juice, only pulp and seeds, which, in my opinion, are the most suitable for making sauce and ketchup with apples.

I also want to note, take only red and ripe tomatoes. It is very important that there is no white core inside.

For ketchup, take exactly red tomatoes, yellow, pink and black prince tomatoes are not suitable. It certainly does not affect the taste, but the color is very. It is from red tomatoes that a beautiful, red and fragrant ketchup is obtained.

Tomatoes must be washed. I removed the middle and cut the tomatoes in half. I shift the tomatoes into a saucepan (preferably with a thick bottom) and put on fire. My tomatoes are not juicy, so I added 2 tbsp to chopped tomatoes. spoons of water so that they do not burn until they release their juice.

We also need apples. For 2 kg. Tomatoes need 4 large apples. The most suitable apple variety is "Antonovka", "Glory to the Winner", or so that the apples are not too juicy.

I washed the apples under running water.

I cut the apples in half, removing the tails and the middle. Then I cut each half into 3-4 parts. I add apples to tomatoes. And simmer them on low heat.

As you can see, the tomatoes released enough juice. It is only very important to stew tomatoes with apples over low heat.

I covered the pan with a lid, but until it boiled, and then stewed without a lid to evaporate excess moisture.

In total, I had stewed tomatoes with apples for about an hour. You focus on the readiness of apples and tomatoes. It all depends on the variety.

In this recipe, I will rub the tomatoes through a fine sieve. It is only for cooking that you need to twist the tomatoes and peppers through a meat grinder, but for ketchup, the skins are not needed.

Tomatoes with apples need to be rubbed through a sieve. You need to do this in batches. It is most convenient to wipe with a regular whisk. With a whisk it comes out much faster and only skins and seeds remain.

I poured the resulting sauce into a saucepan. Again, it is more convenient to use a heavy-bottomed pot.

I add salt, sugar, cinnamon, black pepper to ketchup. The recipe says 2 tbsp. spoons of sugar. But I tried and decided to add another 1 tbsp. a spoonful of sugar. Since we love sweeter ketchup (especially children). You see for yourself, try the resulting ketchup and add salt and sugar to your liking.

To make ketchup, I used ground cinnamon, but you can add 1 cinnamon stick, and at the end of cooking, take out the cinnamon stick.

In ketchup with apples, following the recipe, you need to add 4 tbsp. spoons of apple cider vinegar. I have 5% apple cider vinegar. I add 4 tablespoons of vinegar.

I mix everything again and put the ketchup on the fire. Bring to a boil and reduce heat to low. I cook ketchup on low heat for about an hour ( exact time did not detect).

Ketchup boils down during the cooking process and becomes much thicker and slightly reduced in volume, and the color becomes much brighter.
